There is little liquid in beets, they are solid, the juice dries quickly. We dry first on a high T * until it withers, and there it will be visible - either to dry it out, or to subtract T *.
I prefer to dry all vegetables on a high 55-60 * dry, dry faster and the drying time is shorter, the effect is better

I dry raw beets, I would not say that it has become lighter straight, but definitely sweeter! I had a large bucket of huge beets, I used to chop and freeze this too, but this time I dried it, a little less than a three-liter jar turned out from the shredded bucket, I liked it: space is saved and stored for a long time without a refrigerator

It dried fairly quickly and perfectly when wet. And drying boiled beets is very problematic, maybe I did it this way? Boiled beets, cut into slices, dried for a very long time, cut them smaller - gave juice. When it dries, it barely ripped it off from the mesh, stuck tightly. I will never cook and dry again.

I would be too lazy to cook, and then dry it too, it still seems to lose color after boiling, but I still dried it for soup, there is nothing to cook twice

I added dried beets, the one that was first boiled, into the minced meat for the turkey galantine. Spun the beets in the coffee grinder, it became like powder. The mince was beautiful, reddish in color. Galantin was baked in the oven, it turned out very tasty. And the beets gave a beautiful "sausage" color to the finished product.
