How much sugar did you put in the jam, and in what layer (thickness) did you pour the jam on the tray?
It is advisable to make thin layers in the dryer (the bottom is visible), and then they will be plastic after drying.

Admin, how does the drying of marshmallows depend on the amount of wamsahar? I also have blueberry and currant jam that no one eats. What needs to be done with them in order to get a good marshmallow?

Alena, I don't remember now, but different preserves or jams dry in different ways. You need to observe and remember from which berries and preserves or jam the pastila is dried. And a thin layer needs to be poured.

If you think about it, then:
- raw berries-puree with a small sugar content for taste - the raw juice has evaporated in the dryer, the puree has dried up, practically the dried berry mass remains.
- jam-jams contain a very large amount of sugar, moreover, long-boiled sugar, which has already turned into fruit syrup, and in texture it is already a very sticky sweet mass - and the syrup dries for a very long time and remains sticky for a long time

Here, I thought so ...

I also decided to dry the grated berries with sugar, it dried for several days, but did not dry out, it turned out something like marmalade. Then I read somewhere that, because of the large amount of sugar, it is useless to dry the preserves. The pastille doesn't work.

Yes, a large amount of sugar is obtained in the berries, and when heated it turns into sweet syrup, it cannot dry out

I add jam to fresh fruit (instead of sugar), thus utilizing what was not eaten in the past season.
