It's incredibly tasty and quite unusual.
Three kilograms of zucchini, cut into small cubes

Zucchini

Каб cup of vinegar 9% and 2-3 tablespoons of salt are added to the zucchini. Stir well and leave for 6 hours. You can cut the zucchini in the evening and leave it overnight.
Then all the liquid formed during this time is drained.
Zucchini are fried. The point of frying is only to dry the zucchini, but not to fry it until it is fully cooked.
Then chopped greens are added to the fried zucchini. Anything that has grown at that moment in the garden is suitable - parsley, dill, green onions, garlic feathers. But I would not recommend Kinza. A couple of black peppercorns, bay leaf and stir everything again.
Arrange the zucchini in jars and sterilize for 15 minutes. Then roll up.
There should not be any brine in the jars - only pieces of zucchini with herbs.
Zucchini prepared in this way tastes like fried mushrooms.

Gashenka, thanks for the wonderful recipe for zucchini, today I opened the first jar, very tasty pickled "mushrooms", it's just delicious with potatoes, now I will preserve zucchini the only way!
