Ricotta cassatelli (ravioli) with cheese

Ingredients

Pelmeni dough 150 grams of flour
Ricotta 100 grams (can be replaced with drier cottage cheese)
Cottage cheese grains 15% fat 100g
Parmesan cheese 50 grams
Fresh parsley 2 tbsp. l. chop
Salt pepper taste
Meat broth 1-1.5 liters (or replace with 2-3 homemade bouillon cubes)

Cooking method

  • 🔗 I cooked using the quick option, used some for soup noodles, kept the rest in the refrigerator in a bag for a couple of days. This dough can be stored in the refrigerator for up to 5 days. I let the dough warm up a bit on the table while I prepared the filling for the ravioli.
  • Filling: combine ricotta cheese, cottage cheese, finely grated Parmesan cheese, chopped parsley (1 tablespoon), salt, pepper in a bowl, mix the masses with a fork, set aside. A little freshly ground black pepper, or lime pepper, goes well here.
  • Sprinkle a little flour on the cutting board, roll out the dough thinly on both sides so that the board pattern is visible.
  • Cut the dough into wide strips, then into squares of the desired width and size.
  • Arrange the prepared filling on squares, 1 tsp each, cover the top with a second square and connect the edges. Squeeze each ravioli (filling) with your fingers to remove any air and then pinch the edges firmly with a fork.
  • Ricotta cassatelli (ravioli) with cheese
  • Boil the broth, or water with bouillon cubes, salt. Boil the ravioli in the broth until tender, when the ravioli float to the surface. The ravioli are ready.
  • Arrange the finished ravioli on plates, add the broth, sprinkle with finely chopped parsley on top.
