Ingredients

Butter 30g.
Sugar 1 st. l.
Salt 1.5h l.
Honey 1 st. l.
Wheat flour 75g.
Rye flour 75g.
Boiling water 200g.
Dough:

Rye sourdough active 100% 250g.
Wheat flour 250g.
Spices for bread 2h l.

Cooking method

  • Cut the butter into pieces, add sugar, honey, salt. Pour boiling water over, stir until the oil is completely dissolved. Then gradually stir in the flour until smooth. I interfered with the combine. Cool the mass until warm.
  • Mix warm tea leaves with sourdough. Add flour and spices. Knead with a food processor for 7 minutes. Leave until doubled (I have 3 hours).
  • Put the approached dough with wet hands on the table, knead, form a loaf, put in a greased form. Leave until doubled (I have 3 hours).
  • Sprinkle with water before baking.
  • Bake in a preheated oven at 220C - 15 minutes, 180C - 30-40 minutes.
  • Grease the finished bread with butter, cool on a wire rack.

I tried it !!! The taste is similar to Darnitsky. Even the hot one was cut well without crumbs, it didn't wrinkle !!! Just a class ... I did the kneading with my hands, stood in the refrigerator overnight, then rolled up two balls and put them in a bucket. HP heated them on baking for 2 minutes. Proofing for 3 hours. Everything is easy and simple and delicious bread is ready !!!

True, from the spices I have always added only ground caraway seeds and whole coriander (pre-soaked in boiling water), plus a couple of tablespoons of dark molasses, so the taste has completely shifted towards Borodinsky, but I see the spice mixture you recommend and will certainly try it.

I cooked with wheat sourdough, strictly according to the recipe, but I had to add a little flour.
You can do without a mixer and a combine, the dough is easily and quickly kneaded by hands.
