Wheat rye custard bread with sourdough and fruit yeast

Ingredients

Dough (pre-enzyme)
fruit yeast 80 gram
peeled rye flour 80 gram
sugar 1 tsp

wheat flour / grain 50 grams
peeled rye flour 50 grams
boiling water 200 grams

wheat flour / grade 650 gram
salt 19 grams
instant yeast 2 grams

Cooking method

  • Opara
  • Mix all the ingredients, cover with foil with holes and leave for 10-12 hours.
  • Welding
  • Pour boiling water over the flour. Mix well so that there are no lumps. Cover. Allow to cool.
  • Leaven
  • Feed the sourdough the day before 5-8 hours before kneading.
  • Dough
  • Mix flour with yeast.
  • Combine dough, sourdough and brew.
  • Add flour.
  • Kneading 5 minutes. Add salt.
  • Continue mixing. The total mixing time is 15 minutes.
  • Wheat rye custard bread with sourdough and fruit yeast The dough is soft, does not stick. Stretch-fold and ferment. Fermentation for 95 minutes. Stretch fold once after 45 minutes.
  • Divide the dough into 2 parts and shape the bread.
  • Proofing in baskets, seam upwards, 50-60 minutes.
  • Turn over onto a shovel, make cuts.
  • Baking on stone with steam for the first 10 minutes at a temperature of 240 degrees.
  • We heat the stone together with the oven.
  • Remove the steam, lower the temperature to 180 degrees, briefly air the oven.
  • We bake until ready. I still have 25 minutes.
  • We take out, cool on a wire rack, cut and enjoy.

Albina, Thank you. While I bake something new every time. Anything that comes to mind. : girl_haha: If something doesn't work out, then I bake something changing until it comes out. Will dry up fantasy, I will repeat. I used to repeat, baked according to recipes. There were some favorites. Sometimes I just bake something. I will mix it in HP with yeast, it will do there for about 4o minutes and for proofing. I bake in the oven. Also normal. Nobody is picky.
