Ingredients

Pork neck 1 kg
Prunes - 150 - 200 g
Salt
Mix - 7 peppers
White wine 2 tbsp. l
Dry mustard 1 tbsp. l
Honey 1 tbsp. l
Mayonnaise 2 tbsp. l
Garlic 2 cloves.

Cooking method

  • Rinse the neck, dry, make cuts in the pocket (like a book), rub the meat with salt, a mixture of peppers, and prepare a coating - white wine, dry mustard, honey, mayonnaise, mix everything, and rub the meat abundantly over the entire surface and in the pockets. Rinse the prunes with hot water, cut in half and put 6 prune halves in each pocket. Finely chop the garlic and sprinkle the meat on top as if rubbing it. Tie the meat with a string and refrigerate for 1 hour, marinate a little. (To make the meat well marinated and juicier, stick the meat in different places with a fork or knife) Bake in the oven at a temperature of 200 C, 1 - 1.20 hours, depending on the piece of meat.

I had a piece of 1200 g. It was baked for almost 2 hours, first at 200 * C top-bottom heat. After half an hour, the meat was well browned, so I reduced it to 180 * C, changed the mode to lower heat and covered the piece with paper. Nothing was falling apart, the meat was well baked, it was possible to reduce the cooking time by 20 minutes. It turned out delicious and beautiful.

Yana, and cooked, only without the marinator.
I made cuts, salted and pepper and left for a couple of hours. Then she put the prunes in the "pockets", wrapped it with thread. I fried in a multitool in the "baking" mode with the lid open for 10 minutes on all sides, and then cooked in the "stewing" mode for 1 hour 15 minutes (I had a 1 kg piece).
