Sourdough bread can be baked in any bread maker, the only caveat, if the oven is not programmable, then you need to be at home and monitor the entire process. For example, this algorithm, which I use myself:
1.Mix flour + water + sourdough, for at least 10 minutes, until gluten begins to develop. I use the program Dough - pizza.
2. Turn off the stove min. at 30-40.
3. I include the dough in the program, add salt, oil. Kneading again for 10-15 minutes. before the formation of an elastic kolobok.
4. I turn off the stove. Proofing dough. I don't use yeast, so it takes me 1.5 to 2.5 hours to proof it, depending on the temperature in the apartment.
5. If the bread has risen enough, then turn on the "baking" program for 1 hour. All.

The first time after kneading: flour + water + sourdough, in the second batch I add salt and oil, and then a long rise. It is better to add salt and oil later, not in the first batch. Of the three models presented, Mystery has the smallest bucket, but the maximum declared weight is higher (Rollsen and Alaska have 900 grams, and Mystery has 1000 grams). And now on the merits of the question. Yes, in this stove, the display shows not only the time, but also the stage of the process. I really liked it . I baked 2 breads in it on different programs. I had to try out the gift option, so I carefully followed everything that happened. I did not find any discrepancies. A very decent stove for such and such a price.

At first I started to bake with yeast (rye and wheat), the bread smells a little bad (you can say it stinks, compared to sourdough).
Then I found a recipe for a powerful raisin starter (you just need a couple of raisins). As a safety net, I poured yeast into the dough (I did not know then that it was powerful).
And finally, I decided and abandoned yeast in all recipes. It turns out that adding yeast is of no use. The bread rises perfectly. You can pour the sourdough into the dough not 190g, for example, but 400g (optional, but not necessary).It does not spoil the taste of bread (unlike yeast), and then the water (milk) will need to be poured in less, because the leaven is liquid. Everything is done automatically on program 3. In 4 hours, the dough rises normally and has time to bake. Only when kneading rye flour, you need to help a little by hand (I help with a wooden spatula). I also suffered at first, kneading the dough, then on the battery, and there, if you overexpose it, it may sour (more than 4 hours, and because of this it smells awful), it may not rise. In MBM-1203, on program 3, there are no problems. It is not yet clear why all the other programs are needed (just baking and kneading may come in handy). And what difficulties can be, just a little less water, yeast is not needed, pour in the leaven and you're done. Another tip: try not to overexpose the sourdough (feed after 10-12 hours, knead the dough after another 7 hours), so as not to lose the normal smell of bread. The less heavy fractions (coarse flour, seeds, etc.) in the dough, the better it rises.
In order for something to work out, you need to practice first. Out of 15 buns, I spoiled only one (finally and without turning - "laughing chickens" - they pecked it). After all, they learn from mistakes.
