Honey pie with cottage cheese

Ingredients

Margarine 125 g
Sugar 1 tbsp.
Eggs 2 pcs.
Honey 3 tbsp. l.
Soda (quench with vinegar) 1 tsp
Flour 3 tbsp.
For filling:
Cottage cheese 850-900 g
Eggs 4-5 pcs.
Sugar 1 tbsp.
Vanilla sugar 10 g
Walnuts 1 tbsp.

Cooking method

  • Grind margarine softened at room temperature with sugar, add eggs, honey, soda. Gradually adding flour, knead the dough. The dough should be such that you can take it in your hands and it does not stick to them, but at the same time it should remain soft and obedient so that we can then knead it in a mold with our fingers. We pinch off a small piece from the dough (about 1/6 of the whole dough) and put it aside. Put the rest of the dough in a mold (oiled or covered with baking paper) and knead it with your fingers, evenly stretching it along the entire bottom of the mold, making a small side around the edges.
  • Next, we prepare the curd filling. Grind cottage cheese with sugar, add vanilla sugar, eggs and nuts crushed into pieces (you can turn it a couple of times in a blender, you can chop it in a bag and with a rolling pin). We knead all this well and put it in a mold on our dough, smooth the surface beautifully with a spoon.
  • Next, we take our piece of dough set aside, add a little flour to it so that it becomes tighter and roll thin rocking chairs on the table with our hands. We lay them beautifully with a lattice on top of the cottage cheese.
  • All. We put the pie in an oven preheated to 180 degrees and bake for 40-45 minutes until tender. Then we let it cool completely and only after that we carefully remove it from the mold and cut it into pieces.

My form (in the photo) is 25x35 cm. It takes exactly 1.5 of the above portions of ingredients.

By the way, the nuts in the recipe can be replaced with raisins, but then it will already have a slightly different taste. We like nuts better.

Thank you so much for sharing such a wonderful recipe! I used the honey, I don't know the name, it is dark brown, gave the dough an awesome taste and aroma, although I put it in only 2 tbsp. l. I also put cottage cheese in half less, since I had only 0.5 kg., But the taste did not suffer from this, it was insanely tasty. The daughters suggested that next time they try to add not only nuts to the curd, but also grated chocolate. Let's experiment. Save more to you!

The dough is crumbly but soft. To its taste, it strongly resembles a good store-bought Honey cake. The unobtrusive taste of the dough is well set off by the moderately tender curd-nut mass.
This cake is a great option as a main treat for tea / coffee. I do not recommend combining with cookies / jams, because the brighter taste of jams can drown out the taste of the pie and people simply will not taste it

It turned out sooo delicious handsome! The combination of cottage cheese with walnuts in baked goods is very successful. Nuts become so semi-soft, nice. I went into the dough 400 gr flour - this is for those who, like me, do not like to measure with glasses. It turned out very soft, gentle and elastic. With the availability of technology, this pie is made in 2 counts. A slice of that pie with a morning cup of tea.

Our family usually had 250 ml glasses. But flour is different everywhere, eggs are of different sizes, so to write in grams is also surely someone would not have succeeded. There I described what the dough should be, sorry, I didn't think to take a picture.
The recipe is from my mother’s notebook, but she didn’t have kitchen scales when she was born.

Crochet, I poured in the possible minimum of flour, that is, 400 grams, so that later I would add a spoon to the desired density. But I immediately got a good dough, very soft, but not sticky. I admit that the author's dough was denser.Mine was baked perfectly.
