The recipe is this, without a photo, because I prepared a little experiment, after all.
Pork (pulp) -700 gr. *
Lard-300 gr.
Starch ** - 20 gr.
Water (ice) -110 gr. (some can be replaced with alcohol).
Salt-20gr.

Liquid smoke "Kostrovok" -1 tsp ****
On the eve, cut the pork into small pieces, cover with spices and salt, cover and refrigerate. If you add alcohol, then too.
Divide the meat into 2 equal parts - pass one through a fine grinder, the second through a sausage (2 or 4 holes depending on the softness and hardness of the meat).
Lard (preferably straight from the freezer) through the sausage rack.

* For sausages, it is better to take the front ham, shank, trimmings from the ribs - there is connective tissue here and it will additionally bind (gel) the sausage.
** I prefer corn, it tastes more neutral, but it's not for everybody. If you use potato, 15 grams is enough - it is stronger.
*** Spices are a delicate matter, I make my own mixtures. good for pork sausages are black pepper, english pepper, cumin, marjoram, paprika (preferably Hungarian type), coriander, dill seeds, garlic (I prefer dry). The principle is this - 50% black pepper, 50% the rest.
**** Optional.
