Lean cupcake in microwave oven from CH flour

Ingredients

Coarse flour or CZ flour 250 g, sift through a coarse sieve.
Sugar (brown is better) 150 g
Honey (if there is no honey, put sugar instead) 50 g
Vegetable oil 80 g (6 tbsp. L.)
Baking powder 2 tsp (mix with flour)
Salt 1/4 tsp
Vanillin on the tip of a knife (or a teaspoon of vanilla sugar)
Water 300 ml.

Cooking method

  • It turns out a very tender, crumbly cake, bakes very quickly (7 minutes).
  • Not dry or rubbery.

  • Note: you can add cocoa, coconut flakes (fine) to the dough, replace some of the flour with another type of it (made with corn), etc. to your taste. Experiment!

  • In a bowl, mix thoroughly (you do not need to beat) the flour with baking powder, sugar, salt and vanilla. Add oil, water and quickly knead the dough thoroughly (like sour cream). Pour it into a mold greased with vegetable oil (preferably a silicone one with a pipe - you don't need to lubricate it and bakes well in it). Do not fill to the top - the cake will increase in volume during baking.

And I like to bake with CH flour more and add fine coconut flakes. The baking texture is better.

Try to reduce the amount of liquid for a thicker dough. The shape then does not really matter (I recommend silicone molds specifically for microwave ovens - then the baking at the bottom and sides is not wet, as in glass, for example).

I understand you, Alim... But it's not that simple. It seems to me that my microwave does not give out the declared 1100W (possibly insufficient mains voltage for this). I use the same cooking times as indicated in other recipes and do not reduce the power if the maximum is needed. But I came to this experimentally: time, and silicone mold, and principles of dough preparation. But now baking in the microwave helps me a lot: tasty, fast, beautiful. It was worth it.
Try it, then tell me how it turned out at 700 watts. Do I need to add time.

And yesterday I also tried to make a cupcake from their whole grain flour. In my micron, the power is 750, it took me 9 minutes against the indicated 7. I added melted blueberries to the dough and poured melted chocolate with a spoonful of butter on top. Yummy!!!! I don’t remember my first experiment according to which recipe it was not very, some kind of rubber, but this one ... just lovely.
In 15 minutes I kneaded the dough, baked a cake and washed the food processor. If guests unexpectedly come to you and in the house they roll with a ball ... the recipe is for tea.

I added 2 tablespoons of cocoa, it turned out a pleasant chocolate flavor, if there were no recommendations for the thickness of the dough in the recipe, I would have added flour for sure (my hands were itching), but I left everything as it was, the baked goods were baked well and were not dry. Hell in the shape of a "palace", but the dough was not enough for it, the palace turned out without a foundation, in the trail. just try 1.5 servings. Since the cupcake is lean, the recipe turned out to be very useful, thanks to the author

It's hard to say for sure what is wrong ... Empirically, I focus on the thickness of the dough. Flour matters - I don't like it as much with simple as with CZ. And what is the shape? It bakes worse in the low.
