Rye bread with cinnamon (bread maker)

Ingredients

Liquid 300 ml
boiling water from it 70 ml
water + milk in an arbitrary proportion (I replace dry milk with regular milk)
Rye malt 3 tbsp. l. no top
Walnut or olive oil 1.5 tbsp. l.
or creamy 1 tbsp. l.
Rye flour 150 g
Wheat flour 300 g
Salt 1.5 tsp.
Cinnamon to taste about 1/4 tsp.
Sugar 1-1.5 tbsp. l.
Agram 2 tsp
Panifarin 3 tsp
Yeast 1.5 tsp.
Prunes or other favorite dried fruit 0.5 cups
Can add nuts

Cooking method

  • Boil the malt with boiling water, mix with the remaining liquid at room temperature. Add butter, sifted flour. Stir cinnamon with sugar, pour into the corner of the bucket, add the rest of the ingredients.
  • Add dried fruits on signal.
  • Cinnamon tends to taste bitter in large quantities, so try not to overdo it.

Agram is a type of dry leaven for raising rye dough. I buy at VDNKh in the "House-bread" store. If you reduce the amount of rye flour (replace it with the same amount of wheat flour) and add a quarter teaspoon of yeast, then you can do without it.
I buy dry rye malt in the same place, it gives aroma. You can also do without it. The site has a recipe for rye bread using kvass, I think this is a worthy replacement for malt. Good luck!

Agnes, great recipe! I baked it recently, the bread turned out to be amazing, taste and aroma like a cupcake or gingerbread. Instead of agram (I don't have one), I added 1 tsp. Extra-R, and instead of cinnamon - 2 tsp. confectionery mix "Bouquet of spices". This blend includes: cinnamon, star anise, cloves, nutmeg, cardamom, anise, ginger, nutmeg, jamaican pepper. And also a mixture of different nuts and dried fruits.

I tried this recipe - a complete failure :-( the bread did not rise almost, and the taste is not very good :-( what changes did it make in the recipe: instead of rye flour - German whole-grain rye flour (in other recipes such a replacement worked very well), as dried fruits there was some dried apricots, parnifarin replaced with eco-friendly gluten. I don’t know how to help, perhaps the yeast was "inoperative", or the program is short for this recipe (must be at least 4 hours). Now I make all dark breads with one deboning, after the second, only bread with additives - dry gluten and dry sourdoughs can rise, I no longer buy them.
I didn't buy German whole grain, I don't know how it behaves.
Look for your technology for making dark bread, good luck.
