I have never baked any muffins or muffins before (in fact, I don't know the difference between them). I decided to start with this recipe. I bought a Teflon cake pan with 12 silicone molds included. And so they looked good inside, that in fact, I put the dough in the silicone molds inside the mold.
The muffins rose remarkably, turned brown, the aroma was indescribable. She took it out, pulled it out of the molds - the bottom is white and damp. I shoved the muffins back over the silicones and sent them off to bake without a uniform. They settled, of course, but not critical. But the taste…. Mmm ...

I scoffed at the recipe in full: half a glass of expired sour cream instead of milk, cottage cheese is also expired, butter instead of vegetable from the refrigerator immediately grated into cottage cheese, quail eggs 10 pieces, the flavor was zest and grated bitter chocolate, I threw banana circles on top of the dough, they actually covered the dough from condensation, the water did not pass inside.
In general, I really liked the taste, I dream of baking the next one.

There was a pack of cottage cheese for 180g. therefore, the remaining proportions are also increased accordingly. I only have 4 small molds, so I also had to use a small round shape. Yes, to my great frustration and regret, the cupcakes will go to the trash, it's impossible to eat - there is a hard cracked crust on top, inside there is a paste.
What was the mistake I did not understand. The products were measured with scales. The temperature in the oven is as in the recipe (I put an independent thermometer inside). It's a shame.
Perhaps the flour is different for everyone. Then you need to know the final consistency of the dough.
When I poured the liquid mixture into the deepening of the dry center, the flour quickly absorbed everything, but partially remained a dry mixture, I didn't even have time to "fold" it. I was also surprised, because the dough should seem liquid, but here it is super cool, it is impossible to stir, since there is not enough liquid. Chuika did not disappoint me, it ended in a trash can.
I would like to understand what happened.
