Ingredients

1 cup = 240 ml.
1 1/2 cups flour - 230 gr.
1/2 tsp baking powder
1 tsp salt
2 eggs
1/3 cup vegetable oil
2/3 cup milk, slightly overdue
125 g of cottage cheese of any kind and fat content, from fat-free to cream cheese, can be slightly expired (but not spoiled!)

Cooking method

  • 1. Heat the oven to 175 degrees, grease the recesses of the baking sheet or muffin tins with oil.
  • 2. In a bowl, mix thoroughly all "wet" products: cottage cheese, eggs, milk and butter.
  • 3. In a separate bowl, mix the sifted flour, baking powder and salt. Make a depression in the center and pour the wet mixture into it. (You may think the mixture is too runny, but that's ok!) Stir with a spoon - gently, but not too vigorously - just until the flour absorbs moisture. * The mixture will look a little lumpy.
  • 4. Distribute on tins and place in oven for 15-20 minutes or until muffins rise and seal.
  • Check for readiness: the toothpick comes out dry from the center.
  • Allow to cool in tins, remove and serve.
  • Options:
  • For savory muffins you can use cottage cheese with additives (with garlic and dill), you can add about half a glass of olives, sun-dried tomatoes, etc. You can sprinkle it with white or black sesame seeds. Replace vegetable oil with olive oil.
  • For sweet muffins: halve the amount of salt. Add 1/3 cup sugar and a little cinnamon to the dry mixture... You can use vanilla flavored milk, you can add a little raisins - etc.
  • * It is important to remember that the muffin dough should NOT be kneaded for a long time, otherwise they will not rise, they will be dense, clogged. Stir gently but quickly.
  • The baking time in my oven does not match the time in the recipe. And yours may not match! Use a toothpick to check the doneness.
  • Once I took instead of regular milk - coconut (well, I bought a lot out of greed !!!) To be honest, I hardly felt the coconut ... Maybe vanillin, maybe chocolate hammered in ... You should try not to add vanillin, but add 2-3 tbsp ... tablespoons of coconut flakes ...
  • You can boil coconut milk without boiling it, pouring 2-3 bags of coconut flakes into it ... Then the taste will be more intense ... Or grate the pulp of the coconut, the more the better ... Ratio: 400 gr. coconut milk - 100 gr. coconut flakes.
  • I rubbed the chocolate on a grater, about a third of a bar of bitter Babaevsky.
  • Sahara took half a glass. The baking time turned out to be 45 minutes, they did not want to brown in any way. Hazel at 175 degrees, middle shelf.
  • In general, my recipe turned out like this:

Dough. Part 2

1-1.5 tbsp. flour *

Pour into a large bowl, stir with a hand whisk for 30 sec.

* If you poured 1 tbsp into the first part of the test. milk or fermented milk, 1 egg and 2 tbsp. l. rast. oil, then 1 tbsp. flour will suffice. If you put 2 eggs, 3 tbsp. l. vegetable oil, added cottage cheese, then you will need to put more flour to compensate for the liquid, to make the dough thicker.

Grease a multi saucepan with butter, lay out apples cut into pieces (if very sour, sprinkle with sugar) or apricot halves or plums.

In a bowl with dry ingredients (Dough. Part 2) pour the contents of a bowl with liquid ingredients (Dough.Part 1), stir with a hand whisk or spatula, but not for long, just so that the flour is mixed with the liquid. You cannot beat, thoroughly stir all the lumps until completely smooth and uniform, too, because then the dough will not rise well.
