Ingredients

Eggs 3 pcs.
Sugar 165 gr.
Vanilla sugar 1 sachet
Salt pinch
Orange liqueur 1.5 tbsp. l.
Butter 165 gr.
Sifted wheat flour 330 gr.
Baking powder 2.5 tsp
Raisins 75 gr.
Candied fruit 75 gr.

Cooking method

  • Beat eggs with sugar, vanilla sugar and a pinch of salt. Pour the mixture into the HP container. Add soft (not melted!) Butter, orange liqueur, sifted wheat flour, baking powder. Select the "Cupcake" program. On a signal, add raisins and candied fruits pre-boned in flour.

Now in more detail ... I took home-made liqueur ("Sweet couple" from good-cook). I also tried it with cognac (good too). Candied used pineapple. I cut the zest into sooo thin long strips, so it looks much more beautiful in the finished cupcake than grated on a grater (although it is faster on a grater). I did not melt the butter, but simply left it at room temperature for a while (until it became soft), and then cut it into small pieces. The raisins and candied fruits were previously "bathed" in flour. Well, she seemed to say about everything ... I baked the cupcake three times, and all three times left with a bang! (y) Yes, here's another ... The very first time, I baked with lemon juice, and accordingly with lemon zest (it's great both this and that). Both lemon juice and orange juice, I took 75 ml each.

2. 330 gr. already sifted flour or 330 gr. normal?

And there might be a silly question:

I baked this cupcake 2 times - one in a bread maker, another time in the oven. Both were great. I liked the oven better. In HP, the "bottom" was thicker, like a crust. So feel free to bake in the oven - everything will be fine. The cupcake is excellent!

Thank you so much for such a wonderful recipe! (by the way, this is my first successful cupcake in a bread maker. I don't have such a program, so I just mixed it on the "dough" and put it on "baking" for -1.5 hours)

By the way - advice to those who will bake this yummy. I thinly peel the zest with a potato peeler, and heat the peeled orange / lemon in the microwave, poking a couple of holes on top. Then I squeeze it with my hand, the juice flows through these holes. In this way, you can get 1.5-2 times more juice.
Just do not overheat, otherwise it will boil!
