Apple mint jelly

Ingredients

Apples 1 kg
Unpeeled lemon 1 PC.
Apple vinegar 150 ml
Fresh mint leaves 100 g
Sugar 1 kg

Cooking method

  • 1.Finely chop the apples together with the skin and core. Squeeze the lemon, chop the zest and pour it together with the apples into a saucepan, pour the juice and apple cider vinegar there. Cover with water and add about half of all the mint.
  • 2.Bring to a boil, reduce heat, and cover saucepan. Cook for 1 hour. Then place the fruit mass for several hours to express the juice.
  • 3.Finely chop the remaining mint. Pour apple juice into a saucepan and add sugar. Heat the mass to dissolve all the sugar. Now cook until the mixture thickens.
  • 4.Remove the foam from the jelly, stir in the mint. The mass should stand for about 15 minutes for the jelly to solidify. After that, stir it so that the mint is evenly distributed. Chilled Fill the jars with the same mass, put the paper soaked in alcohol on top and seal the jars.
  • Before closing the jars with this jelly, it must be properly cooled !!!

I have 2 hours soon, but it still doesn't work. Everything has darkened.

Cooking until thickened (and it never thickened) lasted 2 hours and 10 minutes (for a longer time, I was simply not enough). Left to cool overnight. By the morning it was slightly gelatinous, I can't say that it was a normal jelly. Taste, further use - only in tea, you cannot smear it on bread, you cannot put it in pies. I rolled it up as it was. It turned out 1 can of 0.5 liters and 1 can of 150 grams.
Either the apples are not the same, or something else, but I don't want to repeat this recipe anymore.
