Canned apricots in dry wine

Ingredients

Pitted apricots 700-1000 g
Sugar - sand 150-200 g
taste
Dry white wine 300 ml

Cooking method

  • It is better to take apricots ripe, but firm.
  • - Pour wine into a saucepan, add sugar, dissolve the mixture until hot.
  • - Add the apricots, mix gently and boil them for about 10 minutes, turning constantly. Apricots will also give their juice.
  • - We taste and sugar. I added a couple of star anise buds for the scent.
  • - We transfer to jars, close with lids and put on the lids until they cool.

Note

The apricots stood perfectly even for more than a week - the flight was normal!
Everyone, bon appetit!

I use a good dry white table wine, or semi-sweet. Fresh syrup will always taste like wine, it needs to be infused. so that everyone in the fruit makes friends. And then, this is not a compote on water with sugar, there will always be a little taste and smell of wine - and why then use wine
If you are afraid, make a jar and put it in the refrigerator for a week, and taste it. Like it - it means your taste, you can roll it up for the winter

Made 6 jars, we will check in winter))))

So so ... How did I miss this?
Apricots are almost green, no one wants to eat. Oak as a table!
We will try!
Admin, which wine is better to take? Can I just name it?
You can also in private
To know for sure what happens!
Admin

Masha, I use the same wine, dry white, as for cooking meat dishes, not very expensive. Wine is used as a preservative, the taste is sour, but weaker than acetic.
I wrote myself a note, I will look later in the closet for what I have and I will write

Tatyana, and if you use dry red wine? otherwise I respect red

Tatyana, and if you use dry red wine? otherwise I respect red

I also love red, so that red dry, a little bit tart, especially Chianti classic, and Montalcino (Italy)

But, it is better to add white to the apricots, the taste is softer, the taste of apricots will remain and the color of the fruits will remain beautiful light And so, you need to try everything, and cook to your taste, suddenly you will personally like it with red
nakapustina
Yes, I didn't think that the color of the apricots would change. I'll try with both red and white.
Tatyana, Thank you!

I know this, I haven't done it myself, but I was present:
Strawberries, raspberries, cherries, etc. pour a bottle of cognac overnight, close tightly, drain the cognac in the morning - use it, and whoever wants to make jam, they say that as usual.
Anchik
Girls, can you get by with plain water instead of wine? I understand that it will not be quite right to taste, but I want to close the apricots for the cakes. And if it is for children, the wine in the composition is unlikely to receive approval.
Admin

Can! But it will be compote, or a completely different recipe for the dish! The beauty of my recipe, in the use of dry wine - let it be a delicacy for adults, and children can dilute the liquid from the jam with boiling water, as many like to do - everyone will be happy

You can go to the Cellar-blanks section, there are recipes for compotes, and blanks for pies
Anchik
Thank you! I'll start, perhaps, with your recipe, and there it will be seen - maybe you really won't need another recipe
Admin

Anya, believe me: it says loudly "in wine"
There is not so much wine, the more dry, mixed with apricot juice, sugar - the concentration is small, more for a light taste than for booze and snacks
Anchik
Personally, I love alcohol in food: both sweet cream with champagne and meat marinated in cognac!))) It gives the dishes an interesting flavor. So your recipe will definitely suit your taste

Poured vodka and cognac, strawberries are also delicious.
You pour out cognac-vodka - for ladies a liqueur, and for a fruit - for a snack in winter.

Admin, Tatiana, brought her thanks for the recipe! Yesterday I made the first batch, I will enjoy it in winter

Irina Palkina
Admin, I did too.

The first batch was made strictly according to the recipe. Now I will prepare the second one with adjustments. I will increase the amount of wine by 100 ml - in the first batch it was not enough for me when I poured it into jars. Add lemon zest, cloves and cardamom.

I think it will taste better for me.

thanks for the recipe!
yes, the wine was semi-sweet Chardonnay, so I took 150 g of sugar
Admin

Irisha, to your health!
The main thing is that I liked the taste itself and the rest is in the details.
And by the New Year, such a present on the table will be super tasty

It was closed last year, the wine was taken from the budget.
I didn't really like the taste right away, but by the new year it's just a fly away. And for a present, and for a present and to eat ourselves.
Stored in the basement, okay.
I think if you do this, the peaches will stand?
Admin
Ljyboputnaja, it is advisable to withstand such blanks, let it brew so that the wedding takes place inside

You can both peaches and nectarines. Only large fruits need to be held in a hot marinade for a longer time. This year I want to add wine stocks, for peaches and nectarines, in halves
