Spicy pickled cabbage.

Oh, cabbage, cabbage!
Our Russian snack!
And with potatoes and meat,
And with vodka in the evening!
Kvass, leaven, fly away!
Banks are never enough!
You can do it in the marinade!
Only be careful with pepper!
This is a spicy cabbage!
By all the rules of art!
And don't be smart here!
Just pour the marinade!
Spices, add garlic,
And leave everything until tomorrow.
And the next day
Eat all and sundry!
Sweet and sour taste, slightly spicy.
Was it really easy to do ?!

0.5 kg cabbage (already chopped)
2 carrots
4 cloves of garlic
1 pc (or 1/2 teaspoon ground) red hot pepper
50 g of vegetable oil
100 ml 9% vinegar
50 ml water
50 g sugar
1 tablespoon (no slide) salt
1/2 teaspoon coriander (crush a little)
(this amount is for an 800 g jar)

Chop the cabbage, three carrots on a grater, cut the hot pepper into pieces (if the pepper is ground, then add it to the marinade), press the garlic through a press, add the coriander and mix everything. We put it in a jar and fill it with hot marinade.
Marinade:
mix water, oil, vinegar, salt and sugar. Bring to a boil and pour hot cabbage. You can eat the next day. A very good snack for meat or as an independent salad. Sweet and sour taste, slightly spicy.

I cook cauliflower in about the same way. So, if the marinade is hot, it DOES NOT CRACK! And if it's cold, everything is as it should be.

If you can add your own addition (maybe it will come in handy), I often make pickled cabbage, I call it "pink", because I rub a little beet into it, just a little bit and then it takes on a light pink tint and looks unusual ...
