Ingredients

Butter 250 g
Sugar 450 g
Semolina
(almost any grind and quality!)

Raisins

dried apricots, dates)

Peanuts (or any other nuts) 150 g
Spice:
Ground nutmeg 0.5 tsp
Ground cardamom
(whole fruits can be cut)
0.5 tsp
Vanillin, ground ginger

Cooking method

  • We measure all the products, wash and dry the raisins, cut dried apricots, peel the dates and also cut them, chop the nuts (I take my walnuts, since I don’t like peanuts) and fry a little, I do this in the microwave on the usual mode, min 3 - 4 , but you need to prevent it at least once. Put the spices separately on a saucer. Immediately a question to the luminaries: is it necessary to peel the cardamom, because I cut and throw everything as it is ... I personally do not add vanillin, although it is in the recipe, it seems to me that it interrupts several other spices. But this is a matter of taste ...

  • Boil milk and water, add sugar, spices and boil for a few more minutes

  • We leave this saucepan over low heat to simmer a little.
  • Next, take a thick-walled saucepan, melt the butter, add semolina and, stirring often with a wooden spatula, fry until light brown. You can fry a little less or more - a matter of taste. A few minutes before the semolina is ready, add raisins and other dried fruits to the milk mixture.

  • When the semolina is ready, reduce the heat to very low and CAREFULLY add the milk mixture. It is better to do it with four hands, but two are also nothing.
  • This is the most dangerous moment, because the liquid immediately boils and begins to splash in all directions. When all the liquid has been poured out, we quickly stir, crushing the lumps.

  • Literally in 2-3 minutes, the halava is ready. Turn off the heat and put the halava from the pan on the dish, giving the desired shape of a low slide with a spatula.

I want to share the halava recipe. This is an Indian dish, there are many different options on the internet, but I like this one the most. A friend once advised him to her husband. The recipe is pretty simple.
