Broccoli soup with arugula

Ingredients

broccoli 300 g
arugula 30 g
shallots (or turnips) 1 PC
garlic 2-3 cloves
lemon (juice) 0.5 pcs
olive oil
water (depending on the thickness of the soup) 350-500 ml

Cooking method

  • Finely chop the onion and garlic. Disassemble the broccoli into inflorescences.
  • In a skillet (with high sides, or mv saucepan), fry the onion and garlic, add broccoli and fry for another 4 minutes.
  • Pour vegetables with water, salt and pepper, bring to a boil, cook for 8-10 minutes until broccoli is done.
  • Pour the soup into a blender, add arugula and lemon juice, beat until puree.
