Ingredients

chicken fillet 300 g
carrot 1 PC
zucchini 1 PC
potatoes (medium) 2 pcs
leek 50 g
chicken spice mix 1 tbsp
parsley 2-3 twigs
sun-dried tomatoes (halved) 8 pieces
salt, pepper to taste
olive oil 1-2 tbsp
butter 30 g

Cooking method

  • Soup with zucchini and sun-dried tomatoes (Lunch from Truffaldino from Bergamo)
  • 1. Cut carrots, zucchini, potatoes into small cubes and fry in a mixture of oils until golden brown. Place in a saucepan with boiling chicken or vegetable stock and cook until the potatoes are tender.
  • 2. Cut the chicken fillet into 5 cm pieces, roll thickly in the spice mixture and fry over high heat until golden brown, transfer to a saucepan with vegetables.
  • 3. Cut the leek into thin rings and fry for 2-3 minutes over low heat. Add to the soup and cook for another 3-5 minutes. Season with salt and pepper to taste.
  • 4. Arrange the soup on bowls, add 3 pieces of sun-dried tomatoes to each. Cut the rest into strips and distribute evenly in portions. Sprinkle with parsley and serve immediately.

Note

The soup cooks very quickly. Light, slightly spicy and very aromatic.
A good start to a hearty, unhurried lunch, which has a lot of meat dishes on the menu.
