In what sense do you use the phrase "unleavened bread"? Most likely, you mean that it does not rise. Where did you get such proportions?

Let this question of mine be for you and the answer
SvetaI
marina_m, you have a bad recipe - there is very little water. For 500 g of flour, you need at least 350-360 ml of water. Therefore, the first problem is the crumb structure. And what seems insipid to you, read here, maybe the reason is this?
Why is store-bought bread tastier ?!
marina_m
the bread maker got after the parents, the measuring cup and spoon are lost. there is only an instruction in which the volume of the first glass is not indicated. Internet searches were unsuccessful. On the site, someone wrote that we take 230-260 grams of flour for 140 ml of water, I took the rest from the recipe from the instructions, but probably not quite right. The bread tastes like baked goods.

Then I won't understand anything at all
How baking - that is, not bland, but too sweet? Well, put in less sugar. I like this bread to taste - no butter and sugar, only flour, water, salt and yeast.
But the flour-liquid balance must be observed in any case, add the correct amount of water and try it, maybe everything will immediately become in order

maybe I'm not expressing myself correctly. Bread smells like muffin, Easter cake, sweet bun. Yes, it tastes sweet, there is no sourness at all

CHEF, thanks, I'll try one of these recipes. I called Vitek until they gave an answer about the volume of the measuring cup

Do you have yeast or flour for baking? These are made with the addition of vanilla.

Why is unleavened bread obtained?

marina_m
thank you very much, looked at the package like baking yeast.
The bread is baked. The smell is completely different, bready. Soft, porous, slightly yeast-smelling. The family really liked it.

Factory bread contains more salt and sometimes sugar.

1.5 tsp salt, 1.5 tbsp. l sugar. 500g flour
For this amount of flour 2 tsp salt, 2 tbsp. l sugar will be just right
