Cooking method

  • Well, I have made a very, very tasty muffin cake for a long time on the basis of such a "hodgepodge" from completely different recipes. But the incredibly tasty and beautiful Marble Pound Cake from Sonador was taken as a basis, for which I never tire of thanking her!
  • Why did I call it "New Year"? I bake very rarely (the eternal struggle with being overweight), but on New Year's - I come off with baked goods! And this magnificent cake-cake will certainly be on our festive table! And to emphasize its belonging to the holiday, also traditionally, I use tangerine elements in the decoration)).
  • Well, now let's move on directly to cooking.
  • Beat the softened butter with sugar with the Flexi nozzle for 5-7 minutes, then change it to the K-shaped nozzle and start adding eggs one at a time, whisking each one with the butter-sugar mixture for at least 1 minute.
  • Mix in flour, salt, baking powder and raisins with the same nozzle.
  • At the end of whipping, take 1/3 of the dough and mix in cocoa.
  • Then we combine the white and black dough together, not stirring too much, to get "marbling".
  • And we put it in a pre-greased and floured form.
  • Following my mother's recipe, I bake in Panasonic 18. But you can do it in any other multicooker, since the author of the recipe emphasizes that the cake may not be baked in the oven. I bake until a dry speck, for me it is 65 + 20 minutes.
  • During this time, we prepare lemon curd and custard.
  • In each of these custard bases, mix all the ingredients and brew with stirring until thickened. I do this in the microwave, in a suitable container (in tall square food containers, marked with PP). Induction Kenwood owners can do by induction. In the microwave, the process goes very quickly, about 6-7 minutes to brew one base (at first, set it at full power for 3 minutes, mix and with an interval between further stirring per minute, bring the base to the desired consistency).
  • We close the finished base with cling film in contact and cool to room temperature.
  • Let the butter warm to room temperature, beat it well with the Flexi nozzle and add half the vanilla milk base and half the lemon curd one spoon at a time, without stopping the whipping.
  • Whisk everything together for a few more minutes and we get a wonderful, airy and very tasty lemon cream! The amount of cream is sufficient for the inner coating of a three-layer cake.If we divided our cake into 2 cakes, the rest of the cream and the prepared cream from the second half of the custard bases can be used for custard cakes or any other confectionery (for example, a biscuit roll).
  • After smearing the cake (the thickness of the cream is about 1 cm), cool it in the refrigerator for a couple of hours, and then fill it with chocolate icing.
  • To prepare the glaze, combine all the ingredients in a saucepan (or a Kenwood bowl, if there is induction), bring it to a boil with continuous stirring and cook while boiling, continuing to stir, for 5 minutes.
  • Then, let the icing cool until slightly warm and pour over our cake. If the icing is not completely flat on the sides of the cake, you can comb them with a pastry comb, as I did this time:

Yes, Olga, if you are going to decorate the cake-muffin with fruits, do not forget to grease them with a gelatin-sugar mixture to keep the fruits from winding and wilting! And firmly attach to the surface and fasten together! I remind you of the proportions - 1 part instant gelatin + 1 part sugar + 3 parts water. Allow the gelatin to swell, heat in the microwave for 20-30 seconds until transparent and apply hot to the fruit with a silicone brush! And immediately lay on the cake - instantly freezes!
