Ingredients

currant juice-puree (black, red, yellow, white, pink) 850 g
needles (pine, cypress, juniper) 150 g
sugar 300-400 g
Zhelfix 2: 1 (Quittin, pectin) 1 package (25g)

Cooking method

  • This is an unusual, but extremely tasty and aromatic jelly with pronounced medicinal properties. It will be a pleasant addition to medicines in the autumn-winter period. The idea was born when I had to cut down the branches of pine and cypress, which were threateningly hanging over the wires that carried civilization to my little country house. It was a pity to throw away these fragrant paws. I took a pair of scissors and very quickly cut a bowl of pine needles and a bowl of cypress legs.

  • By this time, I managed to collect several plastic buckets of black, red and golden currants. If the fate of black and red currants had already been decided, then golden currants were still waiting for their fate

  • To make it easier for myself to seed, I usually just spin the red, pink, and golden currants through the juicer, twice or thrice. From 1.5 kg of golden currants, I got 860 g of juice with a thick layer of puree foam.

  • I twisted the needles in a meat grinder and used most of them to make an additive in tea.

  • And 150 g was added to the currant juice, along with a bag of Zhelfix 2: 1 and sugar. I added zhelfix just in case, since my natural golden currant jelly turns out to be watery. She mixed everything and left to swell and combine for 30 minutes. The scent was amazing.

  • Then, brought to a boil with continuous stirring, boiled for 5 minutes and poured into sterilized jars. I twisted the lids and left it under the blanket until it cooled completely.
