Syrup: honey - 300 gr, sugar - 0.5 cups, poppy seeds - 0.5 cups, any nuts - 0.5 cups.
For deep frying: ghee (I cook with corn) - 2 cups.
Preparation:
Grind the yolks with sugar and butter until white, salt, add whipped separately whites, milk, mix everything well and knead a tough dough on this basis. (After adding half the flour, add vodka to the semi-liquid dough. If the dough is not steep enough, add more flour).
Wrap the dough in a slightly damp cloth and let it sit for 15 minutes, then roll it into a layer 2-3 mm thick and cut like noodles into strips 0.5 cm wide.Either cut these noodles into pieces 2-2.5 cm long, or roll into flagella, which are cut into pieces 1.5 cm long.
Dissolve the oil in a cauldron, heat it well (overheat), then fry the resulting chopped dough in it, using a grid in order to simultaneously take out the chak-chak and prevent the dough from frying more than until light yellow. Pour the fried chak-chak onto a sieve or into a large sieve, drain off excess oil and cool.
Cooking poppy-nut mixture. Boil the nuts with boiling water, remove the peel, chop coarsely. Pour poppy seeds with boiling water for 3 minutes, then lightly heat in a mortar, mix with nuts and let stand in a sealed container.
Cooking honey syrup. Melt honey in a small cauldron or saucepan, add granulated sugar to it, let it boil so that the foam that needs to be removed is released, then boil the syrup. The consistency of the syrup should resemble caramel.
Remove the syrup from the heat and pour the prepared fried noodles into it and immediately - the poppy-nut mixture: mix everything quickly and evenly. Transfer the hot chak-chak to a greased baking sheet with a layer of 2.3 cm (this can be done with hands dipped in cold water). When the chak-chak has cooled, cut it into diamonds or squares.
