The small volume of the cauldron is not suitable for fast frying, while maintaining the freshness of the same vegetables inside. Both pork and chicken should have time to roast, but not dry out. Therefore, a large area is needed. And if you cook Uzbek smoke, you can't even dream of a small cauldron, because coarsely chopped vegetables take up an insane space at first. Thus, a large cauldron is more versatile than a small one. I’m already silent about the ribs, pork or beef - they are also rattled in a cauldron, you will interfere with their figs if the volume is small. And in the big - a nice thing.
But I use cauldrons both in the tail and in the mane, but if you only need it for pilaf, then choose the volume with an eye only to the amount of rice that you always take.
