Garbure soup

Ingredients

duck meat and bones 700 g
onion 2 pcs
carrot 2 pcs
garni bouquet (thyme, parsley, bay leaf)
carnation 3 pcs
allspice 3 mountains
leek 1 PC
potatoes 3-4 pcs
turnip (medium) 1 PC
white beans 1 st
cabbage 0.5 head of cabbage
celery (root) 200 g
smoked meats 300-400 gr
salt taste
vegetable oil optional

Cooking method

  • Garbure soup Coarsely chop one onion and one carrot.
  • Garbure soupPut the meat and bones of the duck in a heat-resistant form, alternating them with chopped onions and carrots. We put in an oven preheated to 180-200 C for 30-40 minutes. You can fry in a pan.
  • Garbure soupSoak the beans in water with a pinch of soda.
  • Garbure soupPreparing a bouquet of garni. Tie the parsley, bay leaf and thyme in cheesecloth.
  • Garbure soupWe put the duck bones and meat in a saucepan, fill it with two or two and a half liters of water, put a bouquet of garni and cook the broth. Drain the fat formed after roasting the duck or use it for frying vegetables.
  • Garbure soupStick the cloves into the second onion and prepare the pepper.
  • Garbure soupStrain the finished broth. Remove the meat from the bones. We return the broth to the stove and let it boil, lay the beans, onions, cloves and peppers.
  • Garbure soupPeel and cut potatoes and turnips into medium slices. Put it in the soup.
  • Garbure soupCut the carrots into cubes.
  • Garbure soupThree celery on a coarse grater. Instead of root celery, you can use stalked celery.
  • Garbure soupCut the leek lengthwise and cut into half rings.
  • Garbure soupChop the cabbage. Savoy cabbage can be used instead of white cabbage.
  • Garbure soupHeat duck fat or vegetable oil in a frying pan and fry the carrots, celery and leeks for 3-5 minutes.
  • Garbure soupThen add chopped cabbage to the pan and cook for another 7-10 minutes, stirring occasionally. Place in a saucepan and bring to a boil.
  • Garbure soupCut the smoked meats into pieces.
  • Garbure soupThrow smoked meats into the broth, salt to taste and cook the soup for another 10-15 minutes.

Yul, and I cooked it! We liked it very much. Well, I generally like vegetable soups and beans and duck too. And then everything somehow harmoniously combined and the "bouquet of garni" gave a certain frenchness
I didn't get a duck soup set, I bought three duck legs. I fried them in a wok with onions and carrots (whole onions, large carrots - three parts across), cooked broth in Shtebe (30 minutes, pressure 0.7). She immediately threw the beans there, she was afraid that otherwise she would not be enough.
She released the pressure forcibly, pulled out the onions, carrots, threw in the prepared vegetables and everything that was supposed to, and on the Soup program for 10 minutes. Here, the pressure did not release, it unlocked itself.
I took all the ingredients according to the recipe, potatoes even less, and I got 5 liters of soup, thick and rich. Maybe I have a bigger glass?
In general, it is very tasty, sometimes I will pamper myself and my family!
