Ingredients

Lamb broth (beef) 1.5 l
Minced mutton (beef) 250 g
Noodles 3-4 handfuls
Onion 1 small
Carrot 1 small
Tomato paste 1 tbsp. l.
Narshirab (pomegranate juice / wine vinegar) taste
Garlic 2 cloves
Parsley 1 bundle
Dill 1 bundle
Cilantro 1 bundle
Salt taste
Dried mint 4-8 leaves
Black pepper 1.5 tsp.
Coriander 1 tsp
Zira 1 tsp
Ground paprika 1 tsp

Cooking method

  • Reduce fire to a minimum.
  • Kufta-shurpa with noodles Gently place the meatballs in the broth without letting it boil - this will allow the meatballs to stay pink inside and not turn into gray lumps.

  • Without simmering (only light bubbles!), Cook for 10 minutes.

  • Serve seasoned as follows:
