It is clear that the isoelectric point has shifted, and at this very temperature the proteins immediately curdled. Left on the table for 20 minutes, filtered, salted, added nuts and stuffed into the cheese maker. Since I saw that the grain was loose, I left it to "ripen" for a day - it did not help.
