Chocolate curd mass

Ingredients

Fat cottage cheese 850gr
cream 20% 300ml
sugar 210gr
cocoa 30gr
vanilla sugar
bitter chocolate 40gr

Cooking method

  • It is made ugly simple, but very tasty. I have been taking cottage cheese from the milkmaid for a year and a half, it is fatty, very tasty. Store cottage cheese, which is lower in fat and drier, can be poured not 20%, but 30% cream. You can also pour 30% fat cottage cheese - your business. I don’t put oil in principle - this is the death of the liver in convulsions))). By adding cream. My cottage cheese takes so much cream with a bang. Since cottage cheese can be completely different - do not pour everything out at once. Pour in and watch. The mass should be plastic, very moist-soft, but not flowing and stay calm on the spoon. Like good sour cream. And personally, I do not like very sweet - sweet tooth, consider this and try. You will probably need to add sugar. The mass tastes moderately sweet, but sweet!)))
  • It is advisable to wipe the cottage cheese / drive with a blender into a homogeneous paste along with cream, sugar, cocoa, vanilla sugar. But then it is better to beat with whisk. So that she has some "pomp", lightness. I immediately whisk in Kitchen's bowl with whisks, because the cottage cheese is moist and spreads very well into the mass and my husband loves the smallest crumbs of cottage cheese that sometimes comes across. But in general, ideally, this should not be so: there should be pasta.
  • Grate the chocolate bar stored in the refrigerator on a coarse grater and add to the mass. Chocolate drops are possible, but thermostable chocolate is a pity for such a thing. It keeps the temperature very well and is better for baking.
  • Lay out the form (I use a high and narrow colander on legs) with damp gauze so that the edges hang down (even strips of bandage will go - checked))), lay out the mass, close the hanging edges on top and put the load. I put a tied plastic bag with about a liter of water. For reliability, I put a bag of water in another one. Place the colander in a bowl to drain the whey and refrigerate overnight (12 hours).
  • Very tasty, children love. In my arsenal there is also a simple one with raisins, there is one with honey and candied fruits. having eaten this year of fatty and insanely sweet Easter, I decided that next year I would make Easter just from my curd mass))). Any))

The dish is designed for

10 dessert portions

Note

We had breakfast in the morning on the veranda. Sun, birds, coffee and chocolate curd mass. Are you already jealous?)))

Chocolate curd mass

I directly see a plate with crispy fresh buns next to it ... and I smear it with a thicker layer ... eh ..
Nutela bank is idle, and the cottage cheese has almost dropped)) persuaded !!!
Nata, thanks for the cream idea!
Trishka
The killer can be as deliciously written, Natasha, thank you so much human for such a simple recipe, without dancing with tambourines, and the possibility of using it as an alternative to traditional Easter!
For a chocolate cake, but such deliciousness!
Scarecrow
Trishka,

You know, it all seemed to me that yolks, for example, in Easter have some kind of sacred meaning. But I didn't see a huge difference)). Probably in the old days they tried to make it more satisfying, high-calorie after fasting. But without yolks and without butter, it is absolutely tasty and plastic and tender ... I don't know. To whom, of course. I have a specific taste: I can't stand very fatty and very sweet, so it's difficult to navigate me.))

Zhannptica,

How long did it take to persuade you!)))
Zhannptica
Scarecrow, we, too, relate to sweets calmly and just do not really like my cottage cheese, but when it contains 400 grams of any, any greenery for 800 grams of cottage cheese, and stuff from the heels of eggs from under the Hen, but in a thin dough ... then yes)))
I'll make half a portion, and then we'll see who is not enough
Trishka
Scarecrow, Natusya, to be honest, I am afraid to put raw yolks in Easter on Easter, you never know!
Scarecrow
Trishka,

No, I did it with boiled yolks

As I remember, for Easter we did not make Easter cottage cheese as such, but there was always sliced blade cheese with a piece of butter on the festive table, you know, this cheese squeezed out in waffle towel bags :) it was not at all sweet but so tasty.

I also have a simple raisin in my arsenal

Scarecrow, Nata, Can you get a little more detail? At least one line of proportions. The process is probably the same as in the chocolate mass (up to the chocolate bar).

thanks in advance

Everything is exactly the same, but you don't put in cocoa and chocolate. And put the washed raisins at the very end.
Svetlenki
Nata, well! Thank you!
Albina
Nata, such a delicious curd. It looks like a chocolate ice cream. 🔗

Nata, I harness for a long time, but I drive more precisely I eat fast. Thank you very much for the recipe, made a third of the portion in the night (like for breakfast) and ... kapets figure! OOO Very tasty ... Made from homemade cottage cheese, I weigh it to a very dry state. He took the cream from me twice as much as stated in the recipe. I decided not to weigh the finished mass, because there is already, uh, little to weigh there ...

Oh yes, I did it with raisins

Scarecrow, to access your recipes after 21 hours you need to hang the lock !!! I did kurabye in the night - half of the tray immediately disappeared somewhere, now a lot ... again it turned out deliciously - I'm not to blame !!!

Scarecrow
Well, yes, well, yes, I am to blame for everything!)))
Elena Bo
Oh, how I missed such deliciousness. There was a thought to make a little Easter in a cheese maker, but she left. Now I will definitely make a curd mass. Thank you!
Scarecrow
Elena Bo,

And I've already done it a hundred times in the cheesemaker. And with cherries and raisins. In the topic about the cheesemaker and wrote.
Doxtur
Nata, thanks a lot for the recipe! I have been looking for a similar one for a long time, but this one is the best .... It's very tasty! Thank you!

Doxtur, You have Scarecrow, there in the recipes wool. She has a lot of such, "best of all"
Doxtur
Svetlana, thanks for the advice, I will clean it ...
Scarecrow
Oh, great health. Also try adding cherries to the chocolate mass - it's so delicious!
M @ rtochka
Late I read about cherries, already in the morning, when I made a lot of tea.

Here I am not a fan of this kind of chocolate: ice cream, cheese. But then I really liked something ...
Although without a veranda and birds are not heard at all. But the sun is abundant today. Spring is still

Scarecrow
M @ rtochka,

But this is the base! Chocolate is optional, but dried apricots, zest, vanilla, raisins and whatever else you decide to add are quite welcome. Though fried onions with mushrooms))). If only it was really tasty for you.
M @ rtochka
So I am for my men, they are lovers of chocolate.
By the way, I made 0.5 kg of cottage cheese, put 100 grams of sugar. Quite sweet.

And by the way, everyone got up, had breakfast, and there was almost nothing left
M @ rtochka
Scarecrow, Nata, is there any secret to make the mass more crumbly, like in the main photo? At my edges, near the gauze, it comes out drier, but in the middle it is still quite paste. And I want everything to be like on the edges
Bends about 1.5 kg, it costs the night.
Or does it just depend on cottage cheese? Or add less cream?

I do it 2 times a week! Eat and eat)
Scarecrow
M @ rtochka,

No secrets. It is evenly pressed out for me. I don’t even know why so. Why do the upper layers "block" the outflow from deep ...
eye
M @ rtochka, Daria, in this case, I would lay out the mass in a wide low layer in order to increase its area, which will give a more even distribution of the oppression weight and a better outflow of moisture.

Nat, am I here at the cha?

I had the same thought!

And it can still be like this - if the house is very hot and dry? Maybe the outer layer "dries up" too much and does not allow moisture to come out of the inner ones?
Scarecrow
eye,

Oh, girls, as much as you want)). Collective intelligence is a good thing.

I also thought about "dries up", but the mass is pressed in the refrigerator. It's humid in there. Moisture gradually but constantly comes from it, in theory, with all the desire, not allowing the edges to dry out. Easter cottage cheese generally swells under its own weight without oppression (so as not to overconsolidate) and has a uniform moisture content.
Svetlenki
Scarecrow, Nata, listen, I don't press anything at all And I work with a mixer very carefully, otherwise the cream seems to be "interrupted". But these are already the features of the existing products.
Crochet
Tus, but sour cream instead of cream is good?
Scarecrow
Crochet,

I guess, yes. It's just that the cream is sweet and the taste is more neutral. But with sour cream it will be just sour cream.
Crochet
Quote: Scarecrow
with sour cream will be straight sour cream

Mine will like it !!!

Nat, and sour cream is probably fatter better?

Or stop at an average fat content of 20 percent?
Scarecrow
Crochet,

Anyone can. If it is very fatty - conscience does not allow, then take it below)).
eye
Quote: Scarecrow
Anyone can.
... but the best thing is to add the fatty one, it ennobles the taste.
and non-fatty acid is one ...
I add the fatty one to the fatty cottage cheese, and also butter, the delicacy should be real!
Venera007
A good mass came out, though with 10% cream and without weighing. It's lazy to me. But delicious !!!! I will weigh it, perhaps, by Easter. And it's good to eat with your family)))
