Seven-year plan
Yeah, Natasha.
The youngest got hooked on him thoroughly! ...
Than any nonsense is ...
Although I bought Russian cheese in VkusVilla today ... I really liked the taste!
The composition is good, I hope they did not hide anything!
april
Thanks for the recipe, but something is wrong with fenugreek ... I bought the packaging exactly as you described it:
Quote: Scarecrow
We need hay fenugreek, which is also called Shambhala and Fenugreek. Found on sale under all three names. Looks like ... hard, hard pieces. Straight stone. After aging in the cheese, it tastes like pieces of nuts with its own characteristic flavor.

I bought it in a good store, the packaging is sealed, the shelf life has not expired, BUT they are completely tasteless - neither smell nor taste ... I made cheese according to your recipe, but the fenugreek did not give anything, no additional taste ... This is some kind of defective fenugreek , or maybe it needs to be prepared somehow additionally?
Scarecrow
april,

Something wrong. It gives a distinct flavor. You can't confuse it with anything, in fact. I think the problem is in the spice.
april
I bought Indian spices in the store ... The store seems to be normal ... Or maybe it should be fried beforehand? And then I made cheese once, so now it's not clear how to use this remaining tasteless fenugreek ...
Scarecrow
april,

Well, I've cooked this cheese sooooo many times. And I never fried fenugreek. It has a distinct and pronounced taste / smell similar to utskho-suneli.
Seven-year plan
Natasha, can I get in? ... about fenugreek ...

april, I just read it from Lazerson ...

I quote:

“For the aroma of fenugreek to unfold in all its glory, it is necessary to fry the seeds in a dry pan before use.
When roasting fenugreek seeds, don't let them blush or the spice will taste bitter. "

Try this last method ... if not, then most likely you will not be able to reanimate! ...

And yet, from him - for those who could not buy Fenugreek ...

"Shambhala seeds give a nutty flavor to dishes, so you can add lightly toasted and chopped hazelnuts to some vegetable dishes instead of Shambhala"

Maybe this technique will work here too? ...
april
Seven-year, Thank you very much for the advice, BUT ... unfortunately, nothing happened ... I slightly heated the seeds in the pan, they did not have time to turn red, a light aroma went, I immediately took them off the fire. I tasted it - bitter is impossible !!! In general, I still had to throw it out ... I will look for where to buy elsewhere ...

Yes, I tried cheese with fenugreek, however, purchased, and I really liked the taste. Therefore, when I cooked it myself, I did not understand why it was completely tasteless ... Well, okay, I'll probably look elsewhere ...

It seems to me that in cheese, hazelnuts will not soften as much as fenugreek, will remain hard. Personally, I wouldn't like it in cheese.
Seven-year plan
Karamelko, but the walnut is not hard ... it becomes softer ... even cut with a knife.
Maybe hazelnuts will be the same ...
Until we try, we will not understand.
Karamelko
I’m right away - it seems to me maybe, it really only seems to me. Gretsky is still softer on its own, isn't it?
Kestrel
Once again I am convinced that the only thing that a woman cannot do without a man naturally is to conceive a child. Everything else is quite within our power. So I did it! With incredible effort and curses I was still able to close my overcrowded cheese pan.Children learned many new words. No, well, about children, this is still a literary exaggeration, out loud in front of them, of course, I do not swear, but the incredible desire "not to deny myself anything" was still
As a result, after the successful completion of this special operation to close the jar, I still came to several conclusions:
-I need at least 2 more such wonderful cars. No, well, cho, twist, twist - one will not be enough
-It is better to squeeze the cottage cheese after straining, before adding all the goodies, I had it, in my opinion, too wet, including this, it seems to me that the whole mass did not fit right away, I had to press it manually first in several approaches
Well, I also have fenugreek, apparently bitter (which is not surprising, it is "a hundred years old at lunchtime" ...
But, in general, I still liked everything very much, all the described jambs are mine, the recipe itself, and in general the further use of the machine (cheese maker) is wonderful! So next in line are a few more recipes from the author's gallery and a huge gratitude to her
Accomplishment
KestrelAnna, do you have a ham maker in an hour? You can attach it to pressing cottage cheese. "LeGko" (p.)!
Smile
Kestrel, Anna, why do you need something special, if there is a double colander, it can be used for a large amount, and on top, with a press, a jar of water (I also put shungite)). For a couple of liters, the form for Camembert was enough, I had it with a lid, and it was only half filled ... I also tried white-sided in a ham maker - I didn't like it - plastic forms are better))

add fenugreek (straight dry)

Nat, I read somewhere that fenugreek seeds are washed with running cold water before use, you don't wash, do you?
Scarecrow
Crochet,

Nope. But who's in the way? Nothing bad will happen to them))).

Under your responsibility ...

Nat, and if you don't put the nut, can you then have more fenugreek?

I wrote about him in some topic, not stupid, yeah ...

They have a pretty good selection of digestible cheeses, take the same Altai ...

Firefly, highly recommend VkusVilovskiy Belper Knole , sooooo gourmet cheese ...

Scarecrow
Crochet,

No, thanks. It's still a spice. It will taste too much.

Inna, nuts come in handy there. In any case, I really like it. Moreover, my fenugreek also turned out to be unsuccessful, I do not feel its taste. And the nuts are straight mmm ... very tasty

bobule
Good day!
Thank you so much for sharing a great recipe!
I, apparently, didn’t cook kefir + milk. It was not compressed at all, but it turned out like curd cheese (I have not yet used colorant to remove whey, but a set of teskom for soft cheese). Also, fenugreek is not all softened (but it is 1.5-2 years old).
But still I liked it very much! Spread on bread. Very interesting taste. Fenugreek is very appropriate with a nut.
Thank you!
Scarecrow
bobule,

Health. Nothing, get used to it. The main thing is that they understood the principle and tried a combination of tastes. If - yours, then you will find your version)).
M @ rtochka
I make this cheese periodically:
Fresh cheese with walnuts and fenugreek
This time I added non-salted pistachios. I put a lot of fenugreek, I really respect him
Scarecrow
The day before yesterday I made and swelled there adzhiki ulyapskaya)). I was too lazy to peel nuts at night)). But I support you - fenugreek and forev nuts!))
smslisa
Scarecrow, dear, Thank you for such a simple and easy-to-use Recipe. I'm so excited! I love fenugreek, I hate walnuts. At first I did it only with fenugreek, the last time I added nuts, I trusted the reviews. Well, people will not admire five pages in vain. God! I experienced a gustatory ecstasy and fell under the table from a culinary masterpiece!
Fresh cheese with walnuts and fenugreek
And most importantly! It's all for me! The child said with disappointment that such cheese would not go to hot buters! In happiness! (he for a thousand cheese with fenugreek for these same, God forgive me)
Scarecrow
smslisa,

Oh, yes, that's so good health!))
Yarik
Scarecrow, Nata, thanks again for the recipe, I also make it with frequency. This time it turned out to be generally cool, both in taste and in consistency.

Fresh cheese with walnuts and fenugreek

Scarecrow
Yarik,

Yes, just perfect!
