Silt-based variations (Swedish jam principle)

Ingredients

Plum 3 Kg
Apples antonovka 2 Kg
Granulated sugar 500-700 gr

Cooking method

  • 1. The plum is pitted in any way, folded into a cooking container and put on low heat without adding water.
  • When it settles, you can add the plums again to the top.
  • There will be a lot of juice, I pour it into a separate container (but this was not in the original recipe).
  • After a while (when the plum has already given up the juice well), puree everything with an immersion blender.
  • If at this moment you turn off the heat and add granulated sugar, stirring vigorously, we get a classic silt, you can immediately roll it up.
  • But if, before adding sugar, add an apple grated on a coarse grater to the plum puree (I take Antonovka), let it boil and only then add sugar (observing the Silt principle), you get a variation. Depending on the amount of sugar, the taste will be either dessert or jam (if sugar is added according to the classic recipe, that is, 700 grams per kilogram of fruit mass).
  • 2. after the plum has been mashed, you can add not apples, but chocolate, as soon as it disperses, immediately turn off the sugar, there will be a chocolate silt, very thick (since we drained the juice).
  • 3. Exactly the same can be done with apricots (apricots with chocolate).

this last year's thing is very tasty, but I have not yet figured out how to remove sugar without losing taste. I think I'll come up with more.
