Wild strawberry jam

Ingredients

Wild strawberry 1 kg.
Sugar 1 kg.
Water 200 ml.

Cooking method

  • Sort the berries carefully.
  • Pour sugar into a basin, add water. Put on high heat, stir until sugar dissolves. As soon as the sugar dissolves, stop stirring, boil for 1-2 minutes. If foam appears, remove it. Gently add the berries to the syrup, mix. Bring to a boil, cook over medium heat for 10 minutes, skimming off the foam. Then turn off the fire, cover the bowl with parchment on top and forget about it until the next day. The next day, put the bowl of jam on the fire again, bring to a boil and cook for another 10 minutes. Then cool the jam and pour into sterile jars

Wild strawberries are the fruits of an evergreen perennial herb of the same name up to 30 cm high with trifoliate, pubescent leaves and yellowish-white flowers. Fruits are ovate or conical, red complex juicy achenes, covered to the base with small fruits, with protruding sepals and bent downward.

Wild strawberry is widespread in Eurasia and America; in the former USSR - in the European part, in the Caucasus, in Western Siberia, Central Asia, Kazakhstan. It grows in forests, especially pine, on forest edges, forest meadows, glades, among shrubs, in shady and humid places, in the Mountains. A remontant variety (for example, Five Months) is known in culture, characterized by long (almost until autumn) flowering and fruiting.

Wild strawberries - delicious, sweet, aromatic, contains up to 80% water, 6.2% sugars, organic acids (mainly apple and citric), iron and phosphorus salts, up to 60 mg% vitamin C, vitamins Bi, Br, E, PP, folic acid, pectin and tannins.

It is consumed fresh, and jam is made from it (strawberry jam has no equal). Wild strawberry leaves are a tea surrogate.
