Hello! Did anyone make an Italian meringue in the car as recommended - straight into a bowl and water and sugar and proteins? Did you succeed? Today I tried it at 096. I put proteins, sugar and water, 120 degrees, the temperature rose to 130 When I turned off the temperature, I continued to beat at high speed until 40-45 grams cooled, after 15 minutes of total time there was not even a hint of a weak beak (see photo), beat it for a couple more minutes, the result is the same, turned it off. Maybe it took longer to beat? I tried it, the consistency tastes differently from the Italian meringue into which the syrup is poured, it turns out something different. And yet, I found in it a lot of such threads (see photo), apparently this is a brewed protein
I was very disappointed, so I hoped that it would be possible to make an Italian meringue in the car without boiling syrup.

I tried to boil mashed potatoes in it, the water was up to the max mark, so it barely boiled only after 23 minutes at the maximum temperature. On a standard induction cooker, I get ready-made puree during this time. As a result, I actually abandoned this function (I just can't understand if this is the norm for 096, or is there something wrong with my copy?
