Carrot cookies on rye flour

Ingredients

Carrot 350 gr.
Sugar 150 gr.
Sour cream 50 gr.
Vegetable oil 100 ml.
Peeled rye flour 150 gr.

Nuts (any) 80 gr.
(I have walnuts)
Cocoa 2 tbsp. l
Salt pinch
Cinnamon, cloves, or vanillin taste

Cooking method

  • Grate the carrots on a fine grater. Add sugar, salt, sour cream, vegetable oil and chopped nuts. Mix flour, cocoa and spices, sift. Combine both mixtures. The dough is thick, sticky. Cover the baking sheet with parchment, put the cookies on half a tablespoon per piece. Bake in an oven preheated to 180 degrees for 30 minutes. Cool completely on a wire rack. Cookies are crispy on top and soft on the inside
