Linadoc, I read and write everything about mint, catnip, lemon balm, about lavender more.
and I have oregano and thyme. Lina, have you tried them? otherwise I have a question squarely - either cut and dry, or put into frosty tea

I have oregano and thyme
ABOUT, Zhen, you're lucky !!! Zakhary did it, it's very tasty! But just be sure to temper. It's a pity I only have a little thyme in pots, but no oregano at all
sweet_blondy
Linadoc, how good that I asked and not silently sent to the dryer))) thanks!
They are probably better individually, right?) Then I will have 3 batches of frosty tea - with mint-lemon balm, with thyme and oregano. Mmmm beauty!)
Lin, can I send you oregano? Thyme at the very 2 bushes, and oregano for more) freshly packed, until it comes to dry up)))
Linadoc
Yes, better individually. Yes, leave yourself, there is a lot needed for the aroma to break through. I also have two bushes in pots of thyme, but this is not enough for tea. I brew it fresh, along with my tea granules. Well, for fish, for meat, for pizza
sweet_blondy
Linadoc, I add dried thyme to my tea) I collected it in the summer) nothing will grow on my window - it's a bit dark.
Lin, what percentage of the total mass should be spicy-aromatic? otherwise I now doubt whether there will be enough, although I will have small batches - around 1 kg)
Linadoc
At least 5%, more is better. With the weight of the entire batch of 1 kg, this is 50 g.

Lina, I can't believe my eyes! She dug her own and brought it into the garden from the meadow, where she procured it. Perfectly took root.

Oregano does not grow in our meadows

Oregano does not grow in our meadows
then it is necessary to sow with seeds and in a pot culture in the winter ... and in the summer add in the wild.
I suffered here that the bush grows tall, rolls around and gets very dirty when it rains. And now I cut a bush during the winter, and there ... everything that was lying around took root. Now the curtain has formed!

By the way, I cut out a hydrangea here. The leaves are huge. Lina, can't you make tea from hydrangea?
Elena Kadiewa
Radushka, and in late autumn the caterpillars have no rest!
sweet_blondy
What peace ?! I went for mushrooms, but in the end I’m standing there tearing mint
Elena Kadiewa
Are you greedy too ?!
Collect mushrooms!
Linadoc
An, hydrangea does not contain tannins and tannins, but it contains a lot of poisonous cyanogenic bitter glycosides. Therefore, it is not suitable for tea. But, given its composition, it can be used as a medicinal herb, but only in small doses! Hydrangea leaves contain febrifugin and other alkaloids, flavonoids (luteolin, quercetin, cyanidin and kaempferol), coumarins (umbelliferone, neohydrangin, ellagic acid, hydrangetin), saponins, rubber, essential oils, rutin, carbohydrates, bitter glycosides. It is used in the treatment of edema, chronic diseases of the urinary system, promotes the excretion of uric acid and prevents the deposition of salts in the joints and urinary tract, has an antimicrobial effect, a pronounced laxative effect. Contraindicated in children, pregnant and lactating mothers, as well as people with impaired cardiac conduction in the form of extrasystoles.

sweet_blondy
Elena Kadiewa, there are very few mushrooms. Though I got some mint))
Linadoc
Good job, Zhen! Delicious "frosty tea" will turn out!
sweet_blondy
Linadoc, Lina, barely stopped herself so that the rosehip leaves could not be collected, my husband would definitely begin to grumble) so I have more leaves for 2 parties - that's enough for me)) 1 here is the second mint with oregano)
Linadoc
Oh, it should be delicious with oregano. Great combination

Soooo, I haven't been here yet. .. Hello everyone! There was a lot of narwhal of mint, but there was little to separate the leaves-stems. Wrapped tight in towels lies-withers. It was torn in the rain, because I had to go, so I will watch how the stems will be especially vchlitsch. Then I'll put it in the freezer, I will temper it 3 times, now the question is, do I understand correctly that let it lie in the freezer and wait for the pick? And then it turned out very little - 70 grams with the stems of everything I will do mono.
Tashenka
To my shame, I saw this topic only today. Apparently due to the fact that in the summer there are big problems with the Internet in the village.
I have a lot of mint of all kinds. I just dry the leaves, one of the grandchildren is very fond of mint tea. Only here a lot of dried leaves take up space. Now I will try to cook with this method.
Yesterday I was in the village. All mint, except for menthol (my favorite) has grown up already decently. But since I was carrying an armful of fireweed, mint only for narwhal tea. Let him grow up still.
Linadoc, can you blend all varieties of mint (chocolate, pineapple, ginger, ...) or, better, 2-3 varieties? If there are no greenhouse greenhouses, is it possible to thaw just at room temperature or is it better to put it in the sun for a short period?
Linadoc
Quote: kartinka
let him lie in the freezer and wait for the good?
Right, Marina! Only mono mint is not an interesting tea, neither color nor tea flavor. I still add it to the mixes. Simply, if I added spicy-aromatic herbs in a large percentage, then I ferment, fry and dry the whole mix as written in this recipe.
Quote: Tashenka
all varieties of mint can be blended
Tashenka, Natalia., sure you may! But again, it's better to mix with other leaves. And when quenching, it is better to warm up at T, above room temperature. It is possible at room temperature, but then quite a long time - 3-4 hours.
kartinka
Linadoc, ruler, I have a lot of apple-pear-black fruit and cherry, with what it is better to stir up the mint, cherries and black fruit I want to do mono-you all write that the smell clogs up, then I will add. But the spices are only mint, and wait until it grows back. With apple and pear - what is the best%?
Ooooy - I forgot about the alder!

kartinka, Marina, with apple, pear, alder and black chokeberry. That's it!
kartinka
Linadoc, how much mint and alder (although I probably won't be afraid of it a lot), so that the mint doesn't interrupt. ..

Quote: Tashenka
(chocolate, pineapple, ginger ,.
I haven't heard of this at all
Linadoc

so that mint doesn't interrupt
Mint will not kill alder. Alder is not more than 15%, but mint can be 20-25%.
kartinka
Linadoc, I realized, I will do it with a mix. I haven't tried the first two yet - but the smell comes back

Luna Nord, Ludmila, I have not listed all my varieties yet. I love everything spicy and aromatic. In the garden there is a separate plot for a fragrant garden. There, in addition to mint, grows thyme, anise lofant, catnip, lavender. And next to it is a patch with a pharmacy chamomile. Now I'm trying to grow sage and savory.
liusia
Where she wandered! And on time! : girl_love: Yesterday I cut mint, there is not so much of it, but there is also a lemon balm bush. Melissa was put without freezing after drying and scrolling through a meat grinder for fermentation. Half of the mint is frozen, the other is dried, rolled and dried. They invited me to visit the dacha at the beginning of July, warned me right away that I would come with sacks.
kartinka
liusia,

I immediately warned that I would come with the bags.

Linadoc
And I made Vanka with mint in a ratio of 95: 5%. Since mint is insignificant, I did it according to Vanka's laws - drying, double scrolling, 4 hours of fermentation, frying at 150 * 15 minutes, drying. And still there is a mint aroma, not strong, pleasant, just like a refreshing note.
liusia
Bought 2 bunches of basil. I want to tea with him. So I'm thinking whether it is necessary to freeze, or just wither and scroll, maybe it can be fermented for an hour and a half

I went to dry the basil. I will wrap it in towels for the night, and in the morning I will scroll and dry it. No freezing.
Linadoc
Quote: liusia
I will scroll and dry. No freezing
The surest way!

liusia, something I did not understand about basil -2 bunch - this is quite a bit. Its just a small amount, how can you make it and add it to tea later? after drying, the gram will come out ...
liusia
Yes, quite a bit came out, though the bundles are good. Until you wait for yours, but you want to try right now. I will mix it, I have many different leaves freezing.
Agnija
Heartfelt thanks! Linochka and everyone who tried it inspired! Lollipops turned out!

I am new here, I was greeted in the topic of Ivan-tea.

And then I will report))) For the first time in my life I made up my mind yesterday. My favorite is garden or apple mint (it smells like Wrigleys spearmint). I love her tea in the evening, even from dried tea - a bright yellow-green delicious infusion.

Cut off all the soft tops (we collect it so that it branches further). I forgot to hang on euphoria. I cut it with a knife, like ordinary greens, and then across - it turned out finely. Crumpled a little and froze. Then she took it out, crumpled the thawed one and left it in the same jar under the lid. Thawed in half an hour, fermented for another 3 hours. The most mint smell was after the first hour, and by the end it became a little "ivanchay". Dried without frying, about 70 ℃. The smell remained "ivanchino-mint" both in drying and after. Didn't inspire me ...

I brewed it. She made a favor. And the taste is really candy! While the gull was insisting, it cooled down, and already began to smell like candy.

I will do more! Tea for half a day is a record. But most importantly, it will not only be more compact for transportation, but also surprising for treats.

Tomorrow - catnip (catnip). I also collected the tops, they are already with buds, a few flowers. Crushed for 3 hours, did not forget))), chopped and in the freezer. Tomorrow I will ferment and report back.

Agnia, glad to welcome to the topic! I also advise you ooooochen to be welcomed to the topic of "fermented tea from garden plants", where I, in fact, appear and write reports. Immediately on last pages... But in the topic "Ivan-tea" I do not appear, the nerves are on the bank

This is exactly what I wrote today. Since the time I started this topic, I have gained experience. And now I ice a little, and if I ice, then I ferment then only an hour and a half. Then the aroma goes away. And now I never freeze Yaznotkovye, I ferment for no more than 3 hours, then use it for the next 4-6 months. Then all the essential oils evaporate and no taste or aroma remains.
Agnija
Linochka, nice to meet you! It's a holiday for me.

I froze it, as you wrote that according to the method of Zachariah, it turned out to be more mint than fruity, and a more pronounced aroma than according to the classical method. I have enough fruit from the garden.

But you defrost 2 times for 3 hours. I think after this it is really not worth fermenting for a long time. And during grinding, fermentation is no longer what begins, but the one that started during defrost is prolonged.

And I only froze it once. Frozen quickly (few raw materials). Therefore, it fermented for 3 hours.

But thanks, I will try not to freeze the next collection of the same mint.

And I will dry the already frozen 2 hours after getting it (half an hour defrost + 1.5 hours fermentation). I will unsubscribe about the received.
Agnija
Catnip (catnip), dried 3 hours, when slicing, after thawing and during fermentation, it smelled only of itself (lemon balm). I did not wait for other odors, after 1.5 hours it began to dry with a short frying (5 minutes, prevented and another 5 minutes). Added the smell of caramel. After drying, it smelled like lemon balm. A day later, the smell of prunes, raspberries began to add ... In a word, I am very pleased! Thank you!

Since I could not stand the smell of dried catnip. It seemed to me that it smacked of mold (although it was not there, it was kept very dry). Therefore, I drank only fresh, and crushed dried ones for children.
