I got to calculating the calorie content of my homemade mayonnaise on aquafaba - liquid from peas. For me now this question is very important, because I am struggling with excess weight, and at this stage all milk and sour milk are contraindicated for me. Only cottage cheese and butter are allowed. Therefore, I season salads with a minimum amount of mayonnaise. How many calories are that? Well, let's find out and count. Go!

I took a can of Green Ray peas, the peas themselves are tender, very good. The liquid turned out to be 160 grams. I weighed and documented everything.

50 grams of liquid
6 grams of mustard in a tube
3 grams of salt
10 grams of sugar. sand (I like a slightly sweet taste)
208 grams Rust. oils (poured to the desired density), weight rast. I calculated the oils by subtracting the total weight of aquafabe + mustard + salt + sah from the total mass of mayonnaise. sand.
Total = 277 grams the weight of the resulting mayonnaise from 50 grams of liquid, see the volume, a faceted glass with a "lip" (Hello, Countryman, that's how I learned to call a glass from you), and so a 250 ml glass with a cap.

Especially I counted so meticulously and show the photo so that the hostesses realized how much mayonnaise and a standard jar of peas can turn out to be foolish. And more than a glass with a slide of mayonnaise, as a rule, is not required.

How many calories are in this mayonnaise and in one spoonful of mayonnaise?

Calculations:
50 grams of aquafaba (38 kcal per 100 grams) = 19 kcal
6 grams of mustard (232 kcal per 100 grams) = 14 kcal
3 grams salt (0 calories)
10 grams of sugar. sand (400 kcal per 100 g) = 40 kcal
208 grams rast. butter (899 kcal per 100 g) = 1870 kcal (that's awful!)

It turned out that our 277 grams of mayonnaise has a calorie content of 1943 kilocalories.

We calculate the calorie content of 100 grams of lean mayonnaise:

1943: 2.77 = 701.44 kcal. Round up to a convenient 700 calories per 100 grams of lean mayonnaise. If my mayonnaise with a cap is slightly diluted to a thinner mayonnaise with the same cucumber pickle, or just water, then the calorie content will decrease slightly, to 670-680 kcal per 100 grams.

With excess weight, one teaspoon or a maximum of a dessert spoon can be seasoned with a salad, if it consists practically of grass, as I have from Margelan radish with onions and one spoonful of peas, then the total calorie content of the dish does not go beyond reasonable limits. And if a losing weight person refills a salad, consisting of boiled potatoes, carrots and the like, like Olivier, with mayonnaise, then you get just a drop dead calorie bomb.

Made grandchildren New Year's Olivier without sausage and 'no mayonnaise'. It turned out great, but it took more oil to thicken it. There was no extra oil or pea flavor in the finished salad. Grind with tablespoons straight from the saucepan. THANK YOU!
