Vegetarian rice mayonnaise

Ingredients

boiled rice 100 g
olive oil or any vegetable oil 200 ml
salt 0.5 tsp
sugar 1 tsp
lemon juice 1 tbsp. l.
mustard ready 1 tsp

Cooking method

  • Boil the rice in a 1: 4 ratio for 30 minutes, the rice should be slightly boiled. Cool completely and discard on a sieve. DO NOT Pour the broth, we still need it.
  • Rice is better to take round grain, well boiled.
  • Pour half of the vegetable oil into the rice and beat with a blender (foot) into a homogeneous puree.
  • Add mustard and beat again with a blender. Mayonnaise can be "flakes", fear not, the process is going well.
  • Now we change the leg to a whisk or mixer and gradually add oil.
  • The amount of oil can be (+ -) 50 ml, adjust according to the situation.
  • If the mass turns out to be too thick, then here we add rice broth in parts.
  • Then season the mass with salt, sugar and lemon juice.
  • By the way, for color, you can add a bit of turmeric to mayonnaise, and for an interesting taste - smoked paprika powder.
  • Bon Appetit!

When I poured the rice with the first part of the oil, I was puzzled: I see that the rice is finely chopped, and the oil floats around the edges. Then I added the broth and .... lo and behold! The oil began to "disappear". Then I changed my leg for a whisk and the mayonnaise turned out to be great.

Made rice mayonnaise. As described in the recipe, first went in flakes. I didn't have rice broth, maybe a teaspoon, because while the rice was boiling, almost all the water boiled away. I added simple cold boiled water. After that, everything acquired a uniform consistency.
My conclusions: the taste is quite mayonnaise, the consistency is more like a custard, or there is still such a custard mayonnaise on flour. With a liver cake, it went off with a bang. For my taste, for example, classic mayonnaise on eggs is better in Olivier. BUT, in the post, this mayonnaise is just a godsend!

I took 30 g of dry rice - just what I needed. At first, nothing was mixed with anything. I heated the mixer and wrote a post. I must say, I usually don't bother: the recipe didn't work out - well, it's not a problem, you never know in Brazil Pedrov ... Online recipes! But I decided to finish it off; added lime juice - and mayonnaise !!! Tasty. Another time I will add less juice, but add more mustard, as well as a pinch of ground red pepper.
