As for the dough sheeter: I take a piece of dough and crush it right on the table with my fingers, shaping it into a square or rectangle, where one side is almost the same length as the width of the rolls. You just need to get used to inserting it so that it immediately over the entire width is simultaneously pulled into the shafts. You don't have to do anything else - the machine will do everything by itself, and the layer will be obtained for the entire width of the dough sheeter, with the exception of small narrowed tails. I never fold the dough in an envelope or roll it a hundred times, I'm stupidly lazy. I just understood the principle once and I’m bastard now.

But a little gag with bolognese - there was no ready-made, I made a fill of 2 tablespoons of tomato paste + half a glass of dry red wine and added water to 500 ml. And I made the dough according to the Italian recipe for pasta - 3 C0 eggs per 300 g of flour + a tablespoon of olive oil + a tablespoon of apple cider vinegar + a pinch of salt. The dough turned out to be tasty, though when I rolled it with a dough roller, a lot of flour rolled up. As I already wrote, I rolled it with a dough roller and cut the strips in the shape of Kuzinka. I put a saucepan with a stirrer right on the strip and a knife with a wheel on it)).
