Note

The pancakes are very fluffy, and oh-oh-very tasty, they just melt in your mouth!
This recipe is for lots of pancakes. I usually do half a serving.

This is how they look

LaraN, and in HP did not make this dough? The first and last time I baked yeast pancakes was a quarter of a century ago. It took me almost all day, I cursed everything in the world and refused further attempts. And now, when my Panas and I are no longer so afraid of yeast dough, I remembered your recipe. I think if you take all the ingredients in half size and drive them into HP on the "main" mode, then something will work out. (Panasonic has a recipe for pancakes, the dough is made on the main mode.) I think I'll try one of these days.
LaraN
Lydia, that's what I do. From this amount of flour, well, a lot of pancakes will turn out. For us half is enough. Half the amount of dough was made in KhP before proofing. Then she poured it into a large saucepan, since it rises well, it can run away.
Cooking is not at all difficult. You just need to knead the dough a couple of times. Doesn't take much time. A total of three - four hours, but not a whole day. Try it!

I sometimes make a lot of pancakes on purpose.
We eat as much as we can at once, while fresh - I lay out the rest in an envelope and in portions, in bags and in the freezer.

Then this is such a find! You can defrost in the evening or in the microwave, the quality of the pancakes does not change, you can do whatever you want with them - and so there is and wrap the filling.

Only you don't need to bake again. Saving time and effort.
LaraN
Yes, Admin, it also turns out delicious to heat up simple pancakes and yeast pancakes, having previously greased with butter.
My grandmother put greased pancakes in a stack in a frying pan and in the oven. The aroma and taste are fabulous! And if a little more honey for a hot pancake! ... Oh, already drooling! ..

LaraN, and how did the dough behave in HP? is it liquid? and on which program did you knead?
I really want to try your recipe, my husband really loves pancakes, and kneading by hand is kind of lazy

God, I'm such a sheep, it turns out! :) After all, I sometimes freeze pancakes with a filling, but I didn't think of pancakes without filling or yeast pancakes! Although there seems to be no difference ...

Kneading dumplings on the program. The dough behaved obediently. At first, it is thick, it is difficult to knead with your hands until smooth.I have not tried it with a mixer. What for? After all, there is a bread maker. Then, when I was refilling the milk, I had to cover the bucket a little with a towel, because it could splash out. Although you can still put the thick dough in a saucepan and dilute there. It's easy to do it with your hands.

Made a dough for yeast pancakes in HP:
Yeast pancake dough:
Wheat flour - 450 g.
Milk + water - 2.5 tbsp.
Butter - 2 tbsp. l.
Sugar - 1.5 tbsp. l.
Egg - 1 pc.
Fresh yeast - 25 g - (or 7-8 g dry)
Salt - 0.7 - 1 tsp.
Vegetable oil --- 1-2 tbsp. l. (into the finished dough)

Dissolve yeast in 0.5 cups of warm milk, add a little flour, sugar, mix thoroughly. Put in a warm place until the yeast cap rises. After the yeast that has come up, pour into the HP, add salt, beaten egg, melted sl. butter, add the remaining flour, pour the rest of the warm milk with water. Turn on the dumplings mode. After the end of the program, transfer everything to a saucepan or bowl (larger). In the process of raising the dough, knead several times (stir slightly with a spoon). The dough is thick. After about an hour, we brew it with boiling water until it becomes liquid sour cream, add 1-2 tbsp. l. rast. butter, give a couple of minutes to rest and bake pancakes. It turned out very tasty and delicate.

To dilute fresh yeast, but dry yeast, probably, is not necessary?

And put dry ones as usual when baking bread
Lydia
Thanks, I thought so. But it's nice to make sure I wasn't wrong.

thanks for the endorsements! This recipe is simply a win-win, you can put everything by eye, at the end bringing to the desired consistency with boiling water or milk.

And I don't understand at all how you can add water to the dough.
Pancakes should only be in milk.
