Fried sourdough pies

Ingredients

Dough:
Wheat flour 900 g
Serum 160 g
Starter culture 100% hydration 160 g
Potato broth 170 g
Salt 1 tsp
Sugar 2.5 Art. l.
Rast. oil 2 tbsp. l.
Dry yeast 1.5 tsp
Filling:
Round rice, boiled in water (1: 2) 1 tbsp.
(250 ml)
Butter 50 g
Hard boiled egg 2 pcs.
Finely chopped onions,
add to rice while hot
Salt, black pepper, curry taste

Cooking method

  • You should get a classic wheat ball or a little softer.
  • The dough should be allowed to rise for 30 minutes, knead and leave until doubled.
  • Form pies and fry them in well-heated oil over medium heat (heat the oil over high, and then reduce the heat).
  • Before putting the pies in the pan, you need to flatten a little, so they are better fried.

Note

The recipe is very simple. It is very difficult to spoil it. You can remove the leaven and replace all the liquid with water and it will still work, only the flour will have to be adjusted. So:
