"Riddle" salad

Ingredients

lungs
carrot 1-2 pcs
onion 1 PC
eggs (proteins) 4-5 pcs
dried mushrooms or mushroom bouillon cube handful
mayonnaise

Cooking method

  • As an option, I would like to suggest how to "utilize" the lungs - both tasty and satisfying.
  • First, fill the dried mushrooms with boiled water and leave to infuse overnight. You can use the mushroom-flavored bouillon cube, but I love the natural product. Boil the lungs, peel off films and cut into strips. Boil the water in which the mushrooms were infused and pour hot over the lungs. It is advisable to leave it overnight, but if there is no time, then it is possible for a few hours. This will give the lungs a mushroom aroma. From the mushrooms that remained, you can, for example, make mushroom sauce. Boil carrots and eggs. Cut carrots into strips, eggs (only proteins) into strips. Cut the onion into cubes and fry in oil until golden brown. Drain the mushroom broth from the lungs, let drain. Mix lungs, carrots, proteins and onions. Salt, pepper and season with mayonnaise (I season with homemade). Bon Appetit!

This salad is always made by my mom. I don't know where she got this recipe from, but when my husband tried it for the first time, he could not guess what it was from. That is why we named it “Riddle” salad. A budget version of salad, which is suitable both for a holiday and for everyday consumption, has been preparing in our family for several years. By the way, when we prepare it for the holidays, not all guests can immediately guess what it is made of. Delicious, hearty and so mysterious!
