Ingredients

Honey mushrooms
Marinade
Water 2 liters
Salt 4 table. l
Sugar 2 table. l
Vinegar 9% 2 table. l
Black peppercorns 15 pieces
Bay leaf 5 items
Dill nebol. bunch
Garlic 6 slices

Cooking method

  • A long time ago, I promised Irina Ikra to lay out a recipe for pickled mushrooms, on the eve of autumn honey ages, my conscience does not allow me to live in peace and demands to fulfill the promise.
  • Marina only honey mushrooms, so these mushrooms are indicated in the recipe.
  • It turns out very tasty, honestly
  • Pickled mushrooms
  • Collect mushrooms with joy.
  • Wash, put in a saucepan, add water, when it boils (foam will go), put it in a colander, rinse with cold water, put it back in the pan, add water and salt, when the water boils add pepper, bay leaf, washed, chopped dill, sugar, vinegar ...
  • Cook for 1 hour, stirring occasionally, add garlic 10 minutes before the end.
  • Before the mushrooms, rinse the jars with boiling water, put the mushrooms in hot jars, cover with lids (pre-boiled), sterilize for 25 minutes.
  • Remove, add an incomplete 1 teaspoon of vinegar to a jar, roll up.
  • Eat with pleasure.

I weighed 1.6 kg per 2 liters, everything went in until the last mushroom and marinade. Cooked in a 5 liter saucepan, was initially filled to capacity with mushrooms, then boiled down. Outlet 0.5; 0.5; 0.3 - 3 cans

Only we did not quite understand what kind of vinegar to pour after sterilization. The banks were already closed and then they wanted to try the rest of the mushrooms (which did not fit into the banks). They turned out to be completely insipid. And we decided that it was necessary to add 70% vinegar (and we poured 9%). We opened all the cans, added 1 tsp. full in 1 liter jar and an incomplete tsp. in a 0.5 liter jar of 70% vinegar. Everything was closed again with boiled lids. And so we tried it, we liked it.

Larissa, of course, each of us makes mushrooms in his own way, but gradually I came to the conclusion that I put all the necessary ingredients in a pile directly in the pan. I don't boil garlic either, but add fresh garlic before use (or not garlic, but onion rings), but I boil the vinegar, pouring in at the end of cooking.

From time to time I pull the fungus out of the pan, try it and decide what is missing in it. Well, this is how we taste the soup.

Sugar in our family is not quoted in mushroom marinade, but lavrushka, peppercorns, salt and vinegar have taken root.)) You can also add hot pepper in rings, very piquant for those who like spicy things. Or a clove, but very few. In short, mushroom marinade allows everything.)
