Mono compotes with a minimum of sugar
Category: Blanks
Ingredients
berries, fruits 0.5 l
sugar 150 ml
jar 3 l
Cooking method

I do not sterilize cans, wash very well. I usually have all the jars, after being emptied, immediately washed, dried and stood under the lid, waiting in the wings. If the can-bottle is freshly washed, then I give it a good flow. The berries are sorted out, washed, flowed. Now a rotary dryer for greenery helps very well, you do not have to wait until there is a flow in a colander or sieve. Often I lay out the berries at once in 10-20 three liters, add sugar, shake them so that the berries give at least a little juice, and start pouring boiling water. With two electric kettles, just have time to turn around.
Grind the fruits to the size of berries, an alligator to help, free the apricot-plums from the seeds, divide them into 4 parts. With such a small amount of sugar, large pieces do not become sugar-free, it may even turn sour, I had this in my first attempts to reduce sugar.
It turns out the compote is not very sweet, such a fresh, rich taste of fruit-berry, with sourness, after such a compote you don't want to drink, as after many sweet ones. Osmosis works here - the redistribution of substances from a higher concentration to a lower one. The syrup is weak - the berry gives off everything. Such a drinking compote turns out. It is made precisely because of the compote, the berries from it are fresh, if you wish, of course, you can eat it. I repeat: the size of fruits and large berries is closer to the size of, for example, cherries.

How interesting, it will be necessary to try it, otherwise I cook compotes for the winter, but in the books on conservation there is a large amount of sugar and the compote turns out to be sweet, you have to dilute, and this is sometimes confusing. Thank you for sharing your experience.

Banks after seaming - wrap up, turn over? Or just leave it on the table to cool naturally?
Irgata
MANDATORY !!!! I forgot about 12 hours for a very good wrapping, especially since I usually preserve many at once - the cans-bottles heat themselves, I do not turn them over, because there are many cans-bottles with self-tightening, and after seaming I just turn over the cans over the sink (silicone mittens

- this is such a convenience after towels, does not slip, fingers stuck in-out-threw the silicone on the table) to check for leaks.

I keep all the preservation in the apartment and these compotes also stand for 2 years, I don't know longer

An even richer compote is obtained from frozen berries. Somehow my husband and I collected a bucket of cherries, but we didn't have to roll it up right away, one bucket went into the freezer. Soon I poured these berries. First, I put them in jars, poured sugar, they thawed and immediately gave the juice and took the sugar into themselves. Then completely thawed, warmed the berries were poured with boiling water. The compote made of frozen cherries was simply amazing, and the cherries themselves were discolored more than fresh ones.

Do you fill it once? Filled it and spun it right away?
Irgata
Yes, boiling water. There are not many berries, it does not cool the water.

Thank you, I tried your recipe. There were frozen cherries and an apple. The simplicity of this recipe captivates, of course. And sugar, so little I have not seen anywhere else.

I have been doing this way for a long time, we like it

I put a pound instead of 0.5 liters. What do you think will happen?
Irgata
yes, somehow it is not critical, in my opinion, if there is, then it is not a big difference, however, I have never weighed half a liter more convenient for me

Irin, it turned out a third or a quarter of a three-liter can.
I closed another 6 pieces. Pears. And plum. Let's see how it stands.
Irgata
you see what's the matter - there is so much sugar for half a liter of the bookmark, but for more sugar you need maybe more, it may not last long, however, everything is in my apartment.

Irsha, thanks for the recipe! I already tried it last summer. There were banks in the apartment under the bed)) I'm starting a new season this year. My family liked the taste of the compote, and I liked the ease of preservation!

A very good recipe. I rolled not only mono, but also made a mix - an apple, a plum ..., I put berries in a balloon - fruits by a third and poured a cup of 250 ml of sugar, my husband likes it sweeter. Everything is well worth it and is drunk.
