Laurel ice cream "Laurel stumps (Italian recipe)

Ingredients

Milk 300 ml
Cream 20-33% 300 ml
Yolks 4 things
Sugar 75 g
Corn starch 2 tsp
Biscuits 150 g
Fresh bay leaf 4 things

Cooking method

  • Trying to find new tastes and combinations, sometimes you manage to surprise yourself and please your loved ones. An unusual, at first glance, combination of incompatible products - sweet ice cream and bay leaves - turned out to be so harmonious, interesting and tasty, albeit unexpected, that all the tasters were amazed.
  • Preparation
  • - Dip fresh washed laurel leaves in milk, bring to a boil and let it brew for 30 minutes. Then remove the leaves from the infusion.
  • - Whisk the yolks with sugar and one tablespoon of milk.
  • - Heat the milk infusion again not to a boil and add the yolks whipped with sugar in a thin stream, constantly whisking.
  • - Dissolve the starch in a little milk and, stirring constantly, pour it into the mixture of milk and yolks. Over low heat, stirring constantly, bring the mixture to thicken. Make sure that the mixture does not burn. Cool it down.
  • - Whisk the cooled cream until soft peaks (do not overwhelm) and mix gently with the egg-milk mixture.
  • - Freeze the mixture in an ice cream maker. Put a narrow long form with cling film, put the frozen mixture on the film. Cover with the edge of the film and freeze completely.
  • - Grind the Amaretti cookies into crumbs before serving. We cover the table with cling film. Sprinkle the crumbs on it evenly over the entire length of our ice cream. We spread the ice cream and roll in crumbs on all sides.

  • - Now ice cream can be cut into cubes and served, garnished with bay leaves or wrapped tightly in plastic and sent to the freezer for storage.
  • - Before serving, take out the ice cream and cut off the required number of stumps.
  • I will definitely repeat it to surprise the guests and please the family.
  • Instead of "Amaretti" you can use any biscuits or sweet crackers, the main thing is that the biscuits are not very soft, and when milled, they do not turn into flour or a viscous mass.
