Lime frozen sorbet with mashed mango

Ingredients

Lime 3 pcs.
Sugar 80 g
Egg white 2 pcs.
Gelatin 6 g
Boiled water (cold) 75 ml
Ripe mango 1 PC.
Cream 11% 2-3 st. l.

Cooking method

  • Dissolve gelatin (this time I had an instant one that does not require pre-soaking) in cold boiled water and melt in the microwave (or in another convenient way). I melted for 30 seconds at 750 watts. If you have regular gelatin, leave it to swell for 30 minutes, then melt.
  • When the gelatin melts, grate the zest from the limes, cut in half and squeeze the juice - I got 75 ml.
  • Beat the whites until foam appears, then gradually, in a thin stream, pour sugar into them, continuing to beat until strong peaks. Stop the mixer, pour the zest into the proteins, leaving a little for decoration

  • Turn the mixer back on and, continuing to beat, pour in a thin stream of lime juice. Beat until the end of the juice. Turn off the mixer - you get the same lush cream Lime frozen sorbet with mashed mango
  • Pour gelatin into it (it should be a little warm!) And mix at low speed of the mixer until smooth. Pour the resulting mass into iron molds, which must first be rinsed with cold water - I used cocotte makers Lime frozen sorbet with mashed mango... Put in the freezer for at least 3 hours - during this time the dessert will harden. But I always leave it overnight.
  • Before serving, cut the mango into pieces, leave a few slices for decoration, peel the rest of the skin and puree with a blender, adding cream to obtain the consistency you need.
  • Remove the finished frozen dessert from the freezer, lower the bottom of the molds into boiling water for 10-15 seconds and turn over onto a plate. Serve with previously mashed mango and cream, sprinkle with lime zest

Note

A very refreshing dessert for citrus lovers that can be served with your favorite fruits and berries. Delicious with pureed raspberries and strawberries. But with mango, for our taste, the most ideal combination is obtained.
When frozen, the dessert retains its airiness and does not freeze completely.
