Ingredients

Ripe pineapple 1 PC.
Piloncillo or dark cane sugar (and 5 grams of molasses) 450 g
Cinnamon 1 stick or 1 tsp
Carnation 5 pieces.
Light beer 1 can
Tobacco leaves (optional)
Water 4 l

Cooking method

  • Tepache is a beer-like drink prepared by the Indians of Mexico, most often from pineapple, although other fruits and even vegetables, such as pumpkin, are sometimes possible. The Indians made this beer in clay pots.
  • Today, tepache is widely sold by street vendors and remains one of the most popular drinks with indigenous Mexicans and immigrants in the United States.
  • If you look at the amount of sugar, you will understand how sweet they love in Mexico! The authentic recipe uses piloncillo, a special kind of unrefined cane sugar ... We have nothing to do but replace it with dark brown sugar, to which you can add a little molasses.
  • The drink is almost non-alcoholic, but sometimes beer is added to the tepache for strength. It is often sold like kvass from a barrel, and, as I saw in the photographs, it is poured into cellophane bags. It looks picturesque, especially when Mexican fruits are floating in abundance in packages. I tried to reproduce this method of presentation.
  • Preparation
  • - Thoroughly wash the pineapple with a clean brush, remove the bottom and the stem. Cut the rest into small cubes. (The peel did not inspire confidence in me, I had to do without it)
  • - Add water, cinnamon, cloves and sugar to a saucepan, boil over low heat, covered for 10 minutes.
  • - Add pineapple slices right away to the hot drink (I also added orange zest and pumpkin slices to compensate for the lack of peel, this is not forbidden, but encouraged)
  • - Cover the pan and leave for two days. Or pour it into a jar, cover hermetically and into a fermenter for two days. Tepache should ferment every other day. I fermented only by the end of the third day, probably the pilloncillo accelerates fermentation.

  • - After two days add a bottle of light beer and let stand for 10-12 hours.
  • - We filter the tepache and put it to cool in the refrigerator.

Note

For extra strength, some add tobacco leaves during fermentation.
There are many options. You can boil pineapple and oranges with tamarind, then add finely chopped apple and pear, then follow the recipe. You will get a richer fruity taste.
You can also eat pineapple pulp, and use only the peel and various additives.
