Ingredients

Wheat flour 370 g
Buckwheat sourdough 2 measuring cups
(cup 240 ml)
Salt 1.2 tsp
Sugar 1.5 tbsp. l.
Sunflower oil 2 tbsp. l.
Kvass dry 2 tbsp. l.
Beer dark 60 ml
Spices for bread 1 tbsp. l.
Yeast 1.5 tsp.

Cooking method

  • We put all the products in the bowl of the food processor, knead a not thick dough for 8-10 minutes, until the silicone spatula sticks to the dough.
  • We spread the dough on the table, sprinkle with flour.

  • We form a sausage from the dough and put it in a mold. My uniform is 30 cm long and not high. We put the dough for proofing in a warm place, oven at a temperature of 30 * C.

Buckwheat flakes (for packaging, see the photo of bread) is a good substitute for buckwheat flour if it is not available. It is not necessary to pre-soak the flakes.

You can knead anywhere, you just need to adapt to the modes and programs of the bread maker, as others do.

It depends on what period of proofing we are talking about and the strength of the leaven.

If the starter is young, you can add yeast for insurance, and reduce it during the next proving.
If you do it with one sourdough, then the proofing will take up to several hours. from 3 to 6-7 hours.
If you want a faster version, add some yeast, the proofing will take 1.5-2 hours.

If you remember, I didn’t work out the sourdough rye on MK, and the next experiment was this recipe, despite the fact that I practically don’t use the oven (a small child runs around the apartment).
I grew the sourdough, put everything in HP (except for dry kvass - this is not the case with us) and turned on the "Pizza" mode. All 25 minutes kneading stood over it and added a spoonful of flour. only towards the end a semblance of a kolobok emerged. further decided not to knead and see what happens. after 2 hours the dough came up and I turned on the baking for an hour. in the process, the roof sagged, and on the cut it was clear that the crumb was lost at the bottom. concluded that the flour is still not enough. But in general, the bread went off with a bang.
Today I did it for the second time. Immediately excluded additional liquid from the recipe and filled in approx. 110 g flour. (yeast - 1 tsp.). it turned out very well!
now I don't even want to make bread without sourdough - it seems to me very tiny

Then I ground buckwheat on a coffee grinder and sifted it through a sieve. What is not sifted - back into the grinder. The bread was excellent. It is worth trying, good luck to you!
