Ingredients

water 50 g
Autolysis 2
flour 1 grade 100 g
water 100 g
opara desem 80 g
Dough
autolysis 1,2 + opara
water 180 g
whole grain oat flour 80 g
flour 1 grade 200 g
wheat germ flour 50 g
linseed oil 2 tbsp
salt 0.5 tsp from HP (or to taste)

Cooking method

  • For bread you will need wheat germ flour and leaven-desem... Due to the presence of oat flour, the bread stays soft for longer.

  • Mix everything, leave for at least 1 day in the refrigerator (I have 2 days). I had them in different containers, it is more convenient for me so that I could take one or the other according to my mood.

  • Mix autolysis 1, autolysis 2, desem dough, a pinch of salt. Leave at room temperature for 12 hours

  • Stir in all the ingredients except salt to the dough. Knead the dough in HP, add salt after 5 minutes and knead for another 5 minutes.
  • Leave the dough to ferment for 1 hour 45 minutes. Then we add up and wait another 1.5 hours

  • Next, shape, final proofing

  • Baked for 15 minutes at 200g + air blow, then another 12 minutes at 200g.
