Pear and creamy panna cotta with caramelized pears (Panna cotta)

Ingredients

For panna cotta:
Cream 20% 450 ml
Fresh pear puree (conference) 180 ml
Sugar (honey or maple syrup) 3-4 tbsp. l.
Cardamom (cinnamon) 1 tsp
Gelatin 2.5-3 plates (or according to the instructions on the package)
For caramelized pears:
Big sweet pear 2 pcs.
Butter 2 tbsp. l.
Brown sugar to taste 3-4 tbsp. l.
Instant coffee or cinnamon for dusting

Cooking method

  • Both adults and children love ice cream! But not everyone can use it even on a hot summer day. Therefore, the famous Italian dessert - panna cotta can serve as a good alternative to it.
  • Panna cotta (Panna cotta) is the most delicate delicious dessert made of cream and gelatin, which is prepared in Italy, and is especially revered in the Emilia-Romagna region. Literally, the name of the dessert translates as "boiled cream" or "boiled cream", but in essence it is a creamy cream pudding with a more delicate texture than traditional jelly.
  • The finished dessert is left in bowls or turned upside down on a plate, which is more traditional, and decorated with berries or sauce. As a rule, Italian restaurants offer three types of sauce to choose from: from a berry mix or strawberry, caramel or chocolate.
  • It is better to use sheet gelatin for this dessert, since it is considered cleaner. Indeed, the taste of panna cotta on sheet gelatin is significantly better, there is no specific taste or smell. If you get a leaf problem, then it is better to use gelatin for desserts and put it in accordance with the norm on the total amount of the liquid mixture.
  • The big advantage of this dessert is that panna kotu can be prepared in advance, it stays well in the refrigerator (about 2-3 days).
  • The best panna cat is obtained from market farm milk or cream. Unfortunately, you still need to look for such a panna cat, even in Italian restaurants. But its taste cannot be confused with anything!
  • Panna cotta are our weakness! I remade them and tried a huge amount! I will share especially successful proven recipes from our and Italian sources, well, and my own too.
  • Cooking panna cotta
  • - First, we make pear puree. We clean the pears from the skin and seeds and make mashed potatoes from them in any available way.
  • - Soak the gelatin plates in a little cold water.
  • - Pour the cream into a ladle, add sugar or syrup and pear puree. Whisking and stirring the mixture with a whisk, heat it without bringing it to a boil. As soon as steam goes, you can immediately remove from the fire.
  • - Add cardamom (cinnamon) to the mixture. We squeeze the gelatin from the water and add it to the main mixture, thoroughly stir it actively until the gelatin is completely dissolved.
  • - We pour panna cat into 4-6 individual molds, which should first be doused with cold water. We put in the coldest place of the refrigerator (not in the freezer!) For at least 4 hours or until it solidifies completely.

  • Cooking caramelized pears
  • - Peel the pears. Cut in half, remove seeds and cut into small cubes or circles.
  • - In a frying pan with a thick bottom, heat the oil, pour the sugar into it, mix and, as soon as the sugar boils, add the pears. While stirring gently, keep on fire until the pears are slightly caramelized (1-2 minutes). Then we remove from fire. If you pour the rum over the pears during caramelization (1-2 tablespoons), then it will turn out to be generally fabulous!

  • Innings
  • Take out the panna cotta from the molds on a saucer and put the caramelized pears on it or next to it, sprinkle with instant coffee or cinnamon.

Note

Delicious! Pear puree softens the straightforward milky taste, but does not prevail, but is delicately felt.
The sweetness of a panna cotta depends very much on how sweet the pears you get. Taste the mixture and adjust the sugar. Panna cottas shouldn't be too sweet, as they are served with sweet toppings.
